Trattoria al Cacciatore - La Subida

In the heart of Collio, among gentle hills just steps from the Slovenian border, this restaurant stands as a true gastronomic ambassador of the territory, celebrating tradition with consistency and warm hospitality in relaxing surroundings where time seems to slow down. The menu embraces the most authentic cuisine – the zlikrofi, potato-and-chive-filled tortelli served with pan juices and shavings of aged Montasio are emblematic – alongside more contemporary interpretations, such as an elegant, restrained squab presented in two services. The carefully curated cellar tells the story of the land

Located in a 16th-century castle in Ceglo, in the heart of the Brda wine region, this restaurant offers breathtaking views of the stunning surrounding vineyards, which are particularly beautiful in autumn. The contemporary and delicious cuisine is showcased through a small selection of carefully chosen dishes, which can be combined into 3, 5, 7 or 9-course menus. The most memorable dishes include porcini mushroom ravioli with sweet and sour chanterelles and mushroom cream, and those with a sweet tooth can enjoy an amazing date cake with salted caramel and ricotta ice cream. This perfectly restored old mill is home to a chef who creates original cuisine that demonstrates her connection with her region and showcases ingredients grown in the restaurant’s own kitchen garden, especially the aromatic herbs that are a characteristic feature of many of the dishes served here. Antonia Klugmann’s house stands in attractive unspoilt scenery near the Slovenian border and in the middle of two major wine-producing areas, namely the Colli Orientali del Friuli and the better-known Collio, both of which are well represented on the extensive wine list.

In a little village in the Friuli countryside, a family-run trattoria welcomes guests into two cosy dining rooms, connected by a charming stone fireplace that spreads warmth and the scent of wood. In summer, service moves outdoors, to a well-tended garden, where the murmur of the leaves accompanies the friendly atmosphere. The menu follows the seasons, bringing the region's authentic flavours to the table: succulent meats, aromas reminiscent of charcoal and, among the main courses, irresistible grilled dishes such as golden, fragrant lamb chops that convey all the flavour of tradition.

Located in Nova Gorica, slightly off the beaten track and a few kilometres from the centre, the restaurant welcomes guests into an urban-chic setting. You will be captivated by the relaxed atmosphere, pleasant music and a modern, reassuring culinary experience. No special effects here, just a balanced and sensitive indulgence for the palate. Among the dishes we sampled, the seafood rice with the fragrant aroma of oysters was undoubtedly our favourite: intense yet delicate, the smell alone evoked the sea breeze. Chef Uroš Fakuč is a constant presence in the dining room, personally overseeing th

Ronchi Rò is an estate and agriturismo immersed in greenery, among the rolling hills of Collio and its lush woodlands: a borderland of captivating and almost fairy-tale character, celebrated for its extraordinary wines, the only ones to appear on the small dedicated list. The cooking of chef Fares Issa is flavoursome and forthright, vivid in colour and deeply seasonal. Drawing on a fine selection of local produce – salami, prosciutto, goose speck, cheeses – it also offers dishes of a more contemporary profile in which his imagination comes to the fore: excellent, for instance, the raviolacci f

A historic and rightly famous restaurant. The same family – now in its sixth generation – has been celebrating the flavours of the region since 1870, just a stone's throw from the Slovenian border, where traditions and aromas blend seamlessly together. Authentic emotions are brought to the table: Palatschinke lasagne with mushrooms and pumpkin béchamel sauce, veal tripe à la Carsolina flavoured with bay leaves and pecorino cheese, and the traditional “Kraško pecivo”, a soft cake with raisins and walnuts, accompanied by cinnamon ice cream. The wine cellar, lovingly curated by the owner, boasts

In the Slovenian part of Gorizia, within the Perla Resort & Entertainment – a vast leisure complex encompassing hotels, a casino and restaurants – Restavracija Calypso is particularly appreciated for its seafood cooking. The dishes, often presented directly in the dining room, celebrate fresh Adriatic catch through predominantly classical preparations, from raw dishes to oven-roasted fish. Alongside the seafood, references to the hinterland are not lacking, with various specialities from the surrounding regions.
