Gostilnica Ruj
Regional Cuisine, Seasonal Cuisine · Bib
€€
At Ruj, you can enjoy an authentic culinary experience steeped in tradition, with a menu described exclusively verbally. Local flavours and ingredients are enhanced, reinterpreted and adapted with a contemporary twist. On rainy autumn days, let yourself be pampered by a warm and comforting soup, perhaps one made with beans, turnip and bacon. The wine list also reflects the restaurant's philosophy, with a careful selection of producers from the local area and neighbouring regions. You will be looked after by dedicated and friendly staff, who will accompany you attentively throughout your meal.

Harry's Piccolo
Italian Contemporary, Mediterranean Cuisine · ★★ Michelin

In the historical center of Trieste, the majestic former stock exchange building has become the new gourmet address of chefs Matteo Metullio and Davide De Pra. Already awarded two stars in the city, the duo have created a spectacular open kitchen here, transforming it into an exciting stage for the few fortunate tables set before it. Three tasting menus are offered: one focused on meat, another on fish, and a third showcasing the restaurant’s signature classics, including the celebrated Harrysotto. Whichever path you choose, the cuisine of Matteo and Davide ranks among the most thrilling in th

Situated on a small hill just outside Vipava, this elegant restaurant – in business for over fifty years – occupies a seventeenth-century residence that once belonged to a family of Venetian nobility. The interiors unfold across several rooms, each with its own distinct personality: particularly evocative are the stone spaces obtained from the original stables and kitchens of the historic residence. An enchanting dining room with a fireplace is the setting for a refined cuisine, where traditionally inspired dishes coexist with more creative and experimental proposals. Under the guidance of Tom

On its website, this modern restaurant describes itself as “the home of different flavours from the Karst region”. The cuisine here is generous and exciting, with a focus on top-quality ingredients that the chef skilfully transforms into delicious dishes. The pizzas are excellent; the Burger Gourmet and Tuna Burger, served with home-made beetroot bread, are superb; and the exquisite desserts simply cannot be missed!

Gostilna Mahorčič
Regional European, Farm to table · Bib
€€
An unmissable restaurant in a small village in the beautiful Karst region, with a classic, beautifully kept dining room with the intimate feel of a private lounge. The owners here are friendly and welcoming and keen to showcase the best of their region. With enthusiasm and expertise, skilful owner-chef Ksenija Krajšek Mahorčič adds a personal, technical touch to Slovenian ingredients, resulting in dishes of the highest quality. Among the appetisers, a good example of his sustainable approach is the puffed wild garlic chip topped with a sea bass cream made from fish scraps. Also recommended is

If you don’t have the opportunity to stay in Štanjel (something that we highly recommend so that you can immerse yourself in the atmosphere of this charming medieval village), we suggest arriving at this restaurant at least an hour before your meal in order to enjoy a stroll through the narrow streets to the Fabiani Gardens, which boast fine views of the surrounding mountains. You might like to start your meal with a local aperitif – a glass of Teran wine produced using traditional methods by the Jazbec winery would be the perfect choice. Špacapanova Hiša

Since 1937, Casa Špacapan has been a point of reference for the cuisine of the Karst. Today, under the direction of Ago Špacapan, the offering is renewed in the spirit of quality and territory. The kitchen celebrates local produce, much of it from their own production: charcuterie and cheeses aged in the cellar, estate wines (Teran, Rebula, Malvazija…), vegetables from the kitchen garden, and ingredients from trusted small suppliers. The dishes tell the story of the Karst, with specialities such as roast lamb or kid and ravioli filled with fresh cow’s curd. Alongside the à la carte and tasting
