Guests highly appreciate the tranquil setting, spotless cleanliness, friendly staff, and excellent pool. The location suits self-drive exploration of nearby areas. Main drawbacks include limited breakfast variety, weak coffee, the necessity of a car, occasional wooden-floor noise, and insufficient air conditioning in summer. Overall, a highly satisfying stay.

Pico Velasco

Modern Cuisine · ★ Michelin

€€€

Located in the heart of the Parque Natural de las Marismas de Santoña, Victoria y Joyel, between the green mountains and the Cantabrian Sea, the Pico Velasco boutique hotel is a superb example of 17th-century Cantabrian civil architecture. In the tastefully renovated interior, Inés Aguirreburualde and award-winning chef Nacho Solana showcase a traditionally based modern cuisine that always aims to highlight the full value of local and seasonal ingredients. Choose between two tasting menus: Albiar (which translates as “sunrise”), and Sincio (a Cantabrian expression that is used to denote a desi

Modern Cuisine · ★ Michelin

Solana is impressively situated just a few metres from the Santuario de la Bien Aparecida, the venerated patron saint of Cantabria. If you’re looking for a picture-postcard view of the Cantabrian mountains you won’t find a better location than this, where the views from your table transport guests to a world of green meadows in which cows can been seen grazing nearby. Chef Ignacio Solana, alongside his sister Inma (sommelier and front-of-house manager), showcases contemporary cuisine with strong traditional roots that is faithful to both the sea and the mountains but with a nod to tradition an

Ibidem occupies a manor house with a somewhat surprising interior featuring an elegant dining room with a designer feel and decorated in shades of white. The cooking here is centred around a single surprise tasting menu with a focus on contemporary cuisine and meticulous presentation.

Ronquillo

Regional Cuisine

€€

A restaurant with a delightfully rustic ambience that includes a profusion of exposed stone and wood, which provides the backdrop for traditionally inspired cuisine that includes a skilful contemporary touch and revolves around the sourcing of the best zero-mile ingredients. The family at the helm takes care of the meticulous service and the beautiful presentation of dishes featuring on the à la carte and three tasting menus: Cullavera, Cueva del Mirón and Cueva Covalanas. All the soups and stews we tried here, such as the pinto beans with venison, were superb.

Casa Garras

Traditional Cuisine

€€

A third-generation family-run restaurant offering guests updated traditional cuisine with a gourmet touch, including meat from nearby Karrantza, fish from the Cantabrian Sea and Txakoli wine from its own vineyard. Here, chef Txema Llamosas conjures up classic dishes from the region alongside more contemporary recipes (we particularly enjoyed the Vizcaya-style pig’s trotters and the stuffed squid with a squid ink foam). It also hosts day events themed on ox reared on the family farm.
