On the dramatic semicircular sweep of Piazza della Repubblica, the entrance beneath the travertine porticoes stands adjacent to that of the Anantara Palazzo Naiadi hotel, which in effect houses the restaurant. The interiors, luxurious and bathed in soft light, captivate through their elegance and atmosphere. The cooking rises to considerable heights thanks to chef Heros De Agostinis, a genuine globetrotter who draws upon his travels and the experience accumulated in some of the most prestigious three-starred restaurants. His dishes are refined yet intense in flavour, with an intelligent use of

Among the most sophisticated and daring kitchens in the capital, Orma Roma stands today as a benchmark for signature fusion cuisine. Here, exotic ingredients and culinary traditions from Latin America, Asia, and the Mediterranean – including Sardinia, homeland of the chef’s wife – interweave in surprising creations, such as the unforgettable “Fregula, sea urchin, and XOrma sauce” sampled during our last visit. The vegetable component is equally significant, supplied in part by the owned gardens just outside the city. The signature, after all, is that of Roy Caceres: Colombian by birth, Italian

At lunchtime, enjoy informal dishes on the ground floor of this restaurant, while more creative gourmet cuisine is served by attentive and professional staff in the dining room on the first floor. Talented Roman chef Andrea Pasqualucci is at the helm in the kitchen, where he prepares creative and imaginative dishes. There are just a few typical Roman dishes on the menu here, and so the experience at Moma will appeal more to those keen on trying new ingredients and combinations.

From the ground floor, the lift leads to one of the city’s most evocative roof gardens: a terrace which, in winter, is enclosed and covered – thus usable in every season – directly overlooking the Colosseum. To your right unfolds the view of the Domus Aurea, in the distance a corner of the Altare della Patria can be glimpsed and, just beyond, the great dome of St Peter’s. The kitchen offers four tasting menus (of which one is vegetarian), with the option of also ordering individual dishes freely. Between classics of Roman tradition, Campanian influences and more contemporary creations unfolds

Nestled atop the Eden Hotel, with its modern setting boasting glazed views over the city centre, from Quirinale to Saint Peter's, Rome emerges enchanting when seen from here. Salvatore Bianco, well-versed in his Campanian origins, presents a cuisine of high gustatory value, characterised by distinctive Mediterranean notes and intelligent seasonal spice and aroma usage. Notably, the chlorophyll buttons served with a deeply intense mussel cream or the modern rendition of Roman Sunday chicken are standout offerings. The skilful sommelier Ruggeri will assist you in wine selections with charm and p

Just steps from Piazza del Popolo, the elegant First Roma welcomes guests with courteous, impeccable hospitality before leading them into a dining room of understated design, in keeping with contemporary taste, yet with tables still set with style and attentive service described as “dynamic” by its own team. At center stage is the cuisine of Daniele Lippi, who interprets the Mediterranean in its broadest sense, reaching well beyond national borders. Two tasting menus are offered: Periplo, dedicated to the aquatic world, and Anabasi Catabasi, which incorporates meat as well. Both conclude with
