Innesto is the epitome of modern elegance, and the spruce interior sports a stylish black and white colour scheme, while marble details add a luxurious note. In fine weather, make a beeline for the patio. The front-of-house team is constantly on the ball to make sure you lack for nothing. You will see Koen Verjans in the glazed open kitchen, rolling out his obvious passion for outstanding ingredients as he deploys his creativity and technical background. He is particularly keen on mixing textures of vegetables to underscore their intensity, while sauces add an extra dimension to each dish. He

La Botte

Peppe, the chef, and Gaspare, sommelier, are writing a new chapter of a culinary story that the Giacomazza family has been carefully composing for decades. Peppe and Gaspare are the second generation and they continue to celebrate Sicily courtesy of a refined, often original score that rolls out generous, 100% authentic flavours of fabulous delicacy.Italy’s rich ingredients are a secret for no one. Chef Peppe nonetheless manages to surprise by the quality of his produce, like gambero rosso, semi-cooked in a creamy risotto crafted with buffalo milk butter, or a gutsy bisque of shrimp heads enha

The charm of this authentic watermill, whose machinery is visible inside, is flanked by a stylish modern “barn”, whose huge windows overlook the stunning countryside. In addition to a peaceful terrace, the establishment boasts four deluxe rooms to prolong the evening in style. This highly distinctive portrait is pursued in the culinary fusion of old and new that also depicts the food. The styles of dad, Bert, and Giel, his son, have been merged and are gathering momentum. Family favourites such as pheasant in a cognac sauce and a dame blanche dessert (with vanilla ice cream prepared on the spo

Modest
Creative French, Modern French · ★ Michelin

Sander Spreeuwers acquired the nickname Modest at hospitality school. Modest also means “unpretentious” which is an equally fitting description of this chef. The culinary score illustrates this ethos and is free of fussy frills or showy presentations, but steeped in Sander’s subtle, sensitive personality. A respect for traditional French fare, lashings of character and a weakness for Asian flavours set the scene for your meal. How about juicy North Sea seabass with a kefir-flavoured beurre blanc that strikes a balance between powerful and fresh acidic notes? Chef Spreeuwers pursues this gutsy q

Modern Cuisine, Contemporary · ★ Michelin

Good food has no need of fancy fussy frills, as Wim Schildermans so masterfully illustrates. In a tastefully restored manor house that has lost none of its period charm, this creative maestro rolls out his “Just Eat Right” concept. First of all, he sources top-drawer, preferably local ingredients, and then deploys his consummate skill and talent. Chef Schildermans cooks boldly and has no qualms about surprising diners, illustrated by fillet of venison, served rare and underscored by a big-boned gravy enhanced with delicate and subtly vibrant Timut pepper. This is paired with marinated red beet

Ogst is the epitome of charming. A natural, Scandinavian-inspired decor sets the warm, casual scene in which you instantly feel at home. Sébastien Wygaerts bowls us over with fresh produce and attention to detail, depicted by elegant plating, cleverly devised recipes and gutsy flavours. The chef fashions distinctive dishes thanks to fresh and acidic nuances, including the occasional exotic tang and doesn’t hesitate to stray from well-trodden culinary paths as he tries out original recipes. Examples include tartare of beef with finely diced watermelon, a fresh, acidic emulsion, oil of capers an

De Kristalijn cannot fail but catch the eye. The modern edifice in which it is housed seems to hover over the surrounding golf course. Floor-to-ceiling windows command knockout views, while trendy furnishings and designer lighting underscore the establishment’s stylish character. Seasoned chef Koen Somers weaves his magic in the entirely open-plan kitchen as he crafts food depicted by purebred technique and generous ingredients. Cuchara
Creative, Modern Cuisine · ★★ Michelin

Music and nature enjoy guest-star status at Cuchara. The former adds a relaxed lounge mood, while the latter, embodied by a wood- and leather-rich interior, paints a distinctive trendy portrait. A seven-metre-long glass tree sculpture hanging from the ceiling seems to float over the dining room! Cuchara is mysterious, confidential and quirky, and Jan Tournier gets a kick out of surprising diners. His punchy, no-holds barred cuisine is offbeat and individual and he manages to astound with just a few ingredients and lashings of creativity, often tinged with Asian notes.
