Schwarzwaldstube

Classic French, Creative · ★★★ Michelin

€€€€

Schwarzwaldstube, the flagship restaurant of the Traube Tonbach hotel, is modern and elegant with a regional flavour; the floor-to-gable glass-paned façade affords unobstructed views of the valley. Chef Torsten Michel and his team delight diners with a carefully balanced interplay of modern and classical influences, rich in finesse and flavour. The quality of the ingredients is exceptional. A prime example is the grilled Brittany lobster, scallop, langoustine and crispy calamaretti with butterhead lettuce, Creole escabeche with bell pepper, wild leek, coriander and shellfish coral cream – show

Restaurant Bareiss

Classic French, Seasonal Cuisine · ★★★ Michelin

€€€€

Claus-Peter Lumpp has been head chef at the fine dining restaurant of the luxurious Hotel Bareiss since March 1992, and his cooking is renowned far beyond the confines of the Black Forest. His style is rooted in classic French culinary tradition but also incorporates international influences. The amuse-bouches are fantastic – warm dumplings with a flavourful lobster filling and an aromatic broth made from watermelon, lemon balm and a hint of chilli. The extensive and elaborate dessert creations by head pastry chef Stefan Leitner also deserve a mention – be sure to leave some room for the prali

Modern Cuisine, Asian Influences · ★ Michelin

€€€€

Here at 1789, chef Florian Stolte has carved out a niche for himself that perfectly complements the culinary portfolio of Hotel Traube Tonbach. He showcases his signature style in a pair of six-course set menus, one of which is vegetarian. His approach is minimalist and modern, with contrasting Asian influences woven through the courses. He skilfully showcases the exceptional quality of the ingredients, allowing, for example, the distinctive flavour of the juicy, tender langoustine to shine by serving it raw as a classic carpaccio and using minimal seasoning. Another case in point is the grill

Another iteration of the Finkbeiner family's Traube Tonbach suite of restaurants. The interior is minimalist and modern, airy and light, with a terrace boasting a great view of the valley. They serve a pleasant mix of international cuisine, seasonal dishes and regional classics, plus steaks cooked on the Lavastein grill. The service courtesy of well-trained staff is very friendly. Incidentally, the place is named after the good forest spirit from a Black Forest fairy tale.

The two charming farmhouse dining rooms (the "Clock Room" and the "Förster Jakob Room", which date back to the 19C, have been lovingly and authentically decorated down to every last detailare. Extremely cordial waitresses in traditional dirndl attire serve excellent seasonal and regional cuisine, including game from the hotel's own hunting grounds and trout from its fish farm. The braised beef roulade in Pinot Noir sauce is equally tempting. "Dorfstuben Classics" such as, such as the Zwiebelrostbraten (fried beef and onions in gravy) with maultasche and sauerkraut are also popular, not to ment

Chef Markus Klein and his wife put their heart and soul into running this restaurant. In a spruce rustic-style decor – or out on the lovely terrace in summer – friendly waitstaff serve up delicious regional and seasonal cuisine made using good-quality ingredients. House specialties include golden trout and brown trout, sourced from Lohmühle trout farm in Alpirsbach. Good to know: Hot meals are served from noon to 8pm. Tip for overnight guests: Ask for the "Wohlfühl" or "Komfort" guestrooms.
