Cédric Burtin

Creative, Modern Cuisine · ★★ Michelin

This tranquil watermill by a millstream abuts a cottage garden. After growing up in the Charolais countryside, chef Cédric Burtin, who trained with world-calibre Lyon chefs of the ilk of Paul Bocuse and Pierre Orsi, has come into his own as he explores the cornucopia of Burgundy. In addition to a savvily mastered creative streak, this authentic, delicate chef has a flair for adding a playful spin to the region’s ingredients and recipes. His surprise menu rolls out delicacies such as whitefish from Lake Geneva, confit and smoked with whitefish charcuterie, runner beans and a jus made from fishb

Maison Lameloise

It's impossible to sum up in just a few lines the story of this institution, whose star-studded career begun back in… 1926! Yet, Lameloise, whose interior features a string of warm, cosy dining rooms, each of which is appointed individually, is far from nostalgic. Éric Pras, former sous-chef to Jacques Lameloise, became head chef in 2009 when his mentor retired; as Éric puts it: "Tradition is the future." Faithful to the establishment’s founding spirit, as inspired as he is meticulous, Pras pays homage to Burgundy's terroir (snails, Bresse poultry, Charolais beef, Morvan hazelnut cazette) whil

The tradition of hospitality is kept alive in this elegant house situated in the middle of extensive grounds dissected by a river. Here, chef Philippe Augé creates carefully prepared cuisine based on classic principles, resulting in dishes such as green carnaroli risotto with frogs’ legs and snails, calf sweetbreads with petits pois à la française and lime-leaf vinegar jus, and a Grand Marnier soufflé with blood orange sorbet. Make sure you save space for the cheese trolley which includes several dozen varieties! Impressive Burgundy wine list.

On Place Carnot, not far from the Hôtel-Dieu, this restaurant with a modern façade occupies the ground floor of a picturesque old house. After stints with Robuchon and Ducasse, chef Christophe Quéant crafts modern, seasonal cuisine based on traditional textbook foundations. His top-quality ingredients are transformed into spot-on, straightforward dishes, blessedly free of fancy frills. The contemporary-style dining room, which sports a beige colour scheme and exposed stonework, is the perfect foil for delicious dishes such as sole fillets with mushrooms and tender leaves, or the Madagascan van

This eatery blends the talents of Édouard, a chef whose CV boasts stints at Quai d’Orsay, Philippe Rochat and Lameloise, and Émilie, a talented pastry chef who adds the final flourish to the fixed set menu. In a swish interior of midnight blue walls, carpets and Art Deco-ish light fixtures, you will sample a score rich in premium produce that is loaded in personality, yet subtly delicate: diver scallops, Jerusalem artichoke and truffles; line-caught seabass, a medley of pumpkin and lemon thyme-flavoured hollandaise sauce… Just the ticket for a gourmet halt on the wine road.

This elegant winegrower's manor house with a plush feel and bags of character is set in a leafy garden where tables are laid out in summer... It's the perfect setting in which to sample Jordan Billan's cuisine, which is rooted in the terroir of Burgundy and showcases the carefully-chosen suppliers. The chef's taste for tradition – think matured Charolais beef, bone marrow and a mustard and tarragon jus – does not prevent him from dreaming up more creative dishes with international influences, such as sole cooked on the bone with shellfish, kasha risotto, seaweed and nashi. After a glittering career in the region, youthful Rémi Genot has returned to his roots in this famous wine-growing village. He pays homage to local producers and showcases fine cuts of meat prepared by his father in the next-door butchers. As comfortable working with vegetables as with fish and meat, he creates meticulous dishes, packed in colour and character. He is also skilled at juxtaposing different textures, in dishes such as tomatoes, fresh smoked goat’s cheese, rose geranium; brill, green peas, girolles, shellfish and melissa jus. L'Écrin de Yohann Chapuis

Creative, Modern Cuisine · ★ Michelin

A former orphanage provides an out-of-the-ordinary venue for the cuisine of Yohann Chapuis, who learned the ropes at Lameloise. The chef crafts food rich in “taste and emotion”, which has its own distinct identity and character, thanks to premium seasonal produce, like scallops, day-boat turbot and game, all exquisitely presented. As examples, take these ormers from Brittanny, with mushrooms, watercress and juniper, or Bresse chicken cooked three ways, with red-wine poached pears. An excellent wine list and a knowledgeable sommelier complete the picture.
