A breath of immortality hovers over this restaurant, where great Piedmontese cuisine finds one of its finest expressions thanks to the Cordero family. Elide at the stoves, her husband Enrico and son Giampiero in the dining room – the latter a profound wine connoisseur and guardian of an extraordinary, ever-growing cellar – carry forward with passion a venue taken over by Giampiero’s grandparents in 1956. Here, tradition takes center stage with hearty, flavor-rich dishes that never tire: from bread agnolotti filled with anchovy and a hint of thyme to the classic braised cheek with caramelized f

At the start of the refined Corso Roma, the city’s elegant promenade dotted with gourmet shops, this restaurant welcomes guests on the first floor of a thirteenth-century palazzo, which also houses the Cantina Regionale del Roero. Here, chef Davide Palluda continues, year after year, to impress with a cuisine that speaks for itself: dishes of exceptional caliber, at times truly memorable, revealing a confident hand and rare sensitivity. The menu looks to Piedmontese roots while embracing modern, personal interpretations. Among these, one dish stands out for its unexpected delicacy, despite fea

Named after the birthday of chef Flavio Costa’s twin daughters, 21.9 reflects both his Ligurian origins and his deep ties to Piedmont. Set within a wine estate whose cellar dates back to the 15th century, with sweeping views over vineyards and rolling hills, the restaurant offers a creative cuisine at the crossroads of land and sea, marrying Piedmontese recipes and ingredients with those of Liguria, while also embracing more contemporary influences. In season, a menu dedicated to game is also available.

In the heart of a postcard-perfect village, the Musso family has welcomed guests for generations with the characteristic seriousness and professionalism of the Savoy tradition. Most importantly, they offer truly interesting cuisine. While grandmother Gemma and mother Sandra kept regional tradition at the heart of their dishes, today Massimiliano channels his passion for the Orient – where he has worked and loves to travel – into a modern, almost fusion approach. Expect amberjack, cleaned in Japanese style and grilled on a yakitori, served alongside a creative take on the family‑garden zucchini

Within the walls of Castello di Magliano Alfieri – a place suspended in time, with a magnificent frescoed hall and soaring ceilings overlooking the hills of Langhe and Roero – chef Paganini’s cuisine takes shape, deftly balancing local tradition and innovation. Two main offerings are available: the traditional menu, “Viaggio in Piemonte (Journey Through Piedmont),” and the “A Occhi Chiusi (Eyes Closed)” menu, customizable in three, four, or five courses according to guests’ preferences. It is in this latter menu that the chef gives full rein to his creativity, crafting bespoke dishes and perso

Situated right next to the Fratelli Massucco winery, with which it shares its comfortable outdoor spaces as well as stunning views of the surrounding hills and vineyards, this restaurant is run by Marc Lanteri and Amy Bellotti, partners in life and work, who have chosen this setting for their new Piedmontese adventure. Their cuisine is full of individual character, with three tasting menus (including a vegetarian option featuring produce grown in their own garden) and dishes also available à la carte style. Local ingredients and recipes naturally take centre stage, always enhanced by small tou

The dishes on the menu are often creative but usually maintain a link with the local area, its products and its recipes, imaginatively reinterpreted by the chef.
