Maxime Zimmer is a chef who is going from strength to strength as he finetunes his sophisticated palette. Foodies have long known his Ardennes establishment, whose contemporary elegance blends seamlessly into the picturesque landscape of the Ourthe that meanders outdoors and where this young master chef is thriving. The ingredient-focused lineup of this artisan relies on produce from local suppliers and his own creative flair, as he transforms familiar ingredients into fascinating dishes. He may start by searing a rib-eye steak to give it a crisp crust, before smoking it over the barbecue and t

Héliport Brasserie
Creative French · ★ Michelin
€€€
Héliport is so much more than a brasserie! It is established in a picturesque castle 10km outside Liège, amidst glorious countryside that is well worth taking the time to explore. Depicted by a tapestry of old beams and snug details, it oozes character and boasts a lovely alfresco terrace for summer dining. The food is light years from your run-of-the-mill brasserie fare and while the recipes may well be traditional, Frédéric Salpetier gives each one a fascinating personal, sometimes Asian twist. He may serve calf’s sweetbread, painstakingly poached, breaded and fried in butter, with a rich pa

Before you even sit down in this friendly joint done up in an inviting vein, you feel perfectly at home. Christine greets diners with a smile and chef Didier Galet waves a hi from the kitchen. Galet is a champion of his region and committed to working with local ingredients. From wood pigeon to fresh veggies, the chef sources everything locally, crafting each ingredient with infinite respect. His cooking draws on his classical training, jazzed up with expressive sauces. He is equally capable of rolling out a rich mushroom and truffle stock, a light frothy espuma of potatoes or a liberal gratin

A log-burning fire is the centrepiece of this stylishly converted 18C farmstead. In his splendid glass-fronted kitchen, chef Diffels can be seen barbecuing most of the main ingredients, which are largely locally sourced. These take centre stage in particularly creative dishes featuring rich sauces and complex flavours. Fermentation adds a vibrant twist. The chef has a gift for coaxing the best out of every ingredient. He celebrates the earthiness of celeriac, for instance, cooking it in a salt crust and combining it with Comté cheese and sherry. This chef has an artistic bent, and his dishes a

Sophie & Nicolas

Seasonal, sustainable and local depict the characterful establishment of Sophie Gigot and Nicolas Septon, which is as pared-back and natural as their cuisine. A seat on the terrace beneath the grapevine trellis is just the ticket for a leisurely meal. Chef Nicolas cooks with spontaneity and flair, changing the menu weekly based on fresh arrivals from local producers, to whom he pays tribute via a small card placed on each table. Is it broad bean season? In which case, they may be flanked by a rhubarb, scented geranium and goat’s milk sauce. Fresh Ondenval trout might be baked in golden, flaky

Take a seat in Olivier Massart’s elegant abode and be prepared to sample his poetic universe. The chef’s vibrant score seeks to nurture our inner peace and well-being as he encourages us to enjoy deftly crafted and inspired fine food. His creativity finds an outlet in a succulent set menu, of which there is also a vegetarian version. He hits just the right balance between spicy hamachi, radishes marinated in red wine, lemon zest, mandarin-spiked dressing and sesame oil. This seasoned chef pursues his goals relentlessly – to our delight.
