The duo of Ugutz Rubio in the kitchen and his sister Izaro overseeing the front of house have taken over the reins of this beautiful large property in the centre of Olaberria, which is also known as the Balcony of the Goierri region. The traditional Basque cuisine served here features excellent grilled fish and meats, including specialities that you won’t want to pass up on, such as peppers stuffed with cod and the famous mushrooms baked in the oven.

The cuisine is centred on two menus, one daily version, the second a tasting option – on the latter guests can choose a main dish from a list of different options. We can highly recommend the braised veal cheek with port wine.

Bailara’s contemporary ambience in a rural hotel in the heart of nature definitely strikes a chord! The modern-inspired cuisine on offer here is centred around a single surprise tasting menu that showcases seasonal dishes and is based around ingredients sourced from local producers (asparagus, teardrop peas, artichokes, cep mushrooms etc) and meat from local breeders. We particularly enjoyed the charcoal-grilled beef tacos!
