At the restaurant of the New Wave hotel, the food is down-to-earth and delicious, and, while it revolves around the region, it also reveals international twists. On the à la carte menu, one dish that reflects the kitchen's characteristically harmonious flavour combinations is "octopus cooked sous-vide, aioli, olives, house-baked bread". The charming little boutique hotel is a spa-style building complex composed of Villa Mathilde and the adjoining Villa Olga. It is also home to a chic restaurant with modern and minimalist interior design and a fabulous terrace. In the kitchen, Nelson Müller's team prepares flavoursome and pleasingly uncomplicated dishes from fresh, good-quality ingredients. Soul food would be an apt label for this cuisine.
