The last thing you expect in an old stone mansion such as this, which has witnessed the passing through of pilgrims heading to Santiago de Compostela along the Way of St James over the centuries, is innovative cuisine that is well worth a break in your journey. Its interior is both rustic and contemporary in style, with two separate sections: the informal dining space at the entrance (Origen restaurant), where the only option is an affordable traditional menu, and the more refined gourmet dining room upstairs (with just three tables) where you can eat while watching the chefs at work. After spending almost 15 years in Chile, Michel Moutroustéguy and his partner decided to return to the chef’s homeland. In the peaceful Basque countryside, they orchestrate a concise, sensibly priced score in a market-fresh vein, as well as an inspired new take on traditional Basque classics. The chef seeks to highlight local seasonal produce, sometimes cooked over embers as he demonstrates his know-how picked up all over the world: sauces and jus that pack a punch, consummate craftsmanship and high-flying seasonings. From starter to dessert, everything is spot on!

In this mountainous area on the edge of the Basque Country, this traditional establishment is simply charming. It is also the repository of a family history going back four generations. Ximun has now taken up the mantle, serving delicious traditional cuisine, characterised by generous portions and tasty well-matured broths and jus. The ingredients are local, and the suppliers are duly listed on the menu. This is comforting fare (think duck raviolo, mix of mushrooms, langoustine bisque; "Axuria" lamb: pressed lamb, macaroni gratin, Xipister, lamb jus), to enjoy in the bright, somewhat rustic-st

A sprawling country estate on the heights of Bidarray and Itxassou is home to a 17C farmstead and outhouses. A panoramic terrace commands a jaw-dropping view over grandiose rolling countryside. Chef John Argaud, who trained with the best in the Basque Country (the Ibarboure brothers in Ithurria), as well as at Le Meurice Alain Ducasse in Paris, shines the spotlight on outstanding local produce. The food is crisp, legible and dotted with creativity; some ingredients are cooked over embers or finished on a hot stone for an added distinctive edge. An example: morels stuffed with sweetbread and du

Located on the ground floor of an old stone building (the same one that houses the two-Michelin-star El Molino de UrdÁniz), Origen showcases the cooking of award-winning chef David Yárnoz, albeit in a much more informal and relaxed format. Directly accessed from the street, it features a rustic-contemporary dining room, bare wood tables and a fixed-price menu (where you choose a starter, main course and dessert), including dishes such as the delicious glazed and baked organic trout with pickled beetroot and parsnips, that adopts a contemporary take on traditional and regional dishes. There’s no better way to describe this restaurant than the chef’s assertion that “Rodero is a family and we try to make guests happy through our work, doing things well and with kindness”. Koldo Rodero was practically brought up in a kitchen and as a result recognised his vocation from an early age. His dream, to ensure that flavour is the core principle in his own cooking, is now a reality thanks to his vision of contemporary Navarran cuisine which is highly creative, intelligent and technical, and showcases his superb ability. The Europa restaurant stands in the heart of Pamplona, very close to the Plaza del Castillo and the legendary Calle Estafeta, a world-famous street due to its association with the San Fermín running of the bulls festival. The Idoate Vidaurre family in charge here is almost as well known as the restaurant itself, thanks to its team of siblings for whom the art of hospitality is much more than just a profession. In the kitchen, chef Pilar Idoate creates an updated take on traditional cuisine with strong roots in Basque cooking. This is enhanced by top-quality ingredients that showcase the provin

This pleasant, contemporary-style restaurant run by a couple takes its name from the Masai word for “butterfly” and sums up its working philosophy in a sentence visible above the bell in the kitchen: “Pursue a dream big enough never to lose sight of”. On its single, contemporary-inspired tasting menu, the focus is firmly anchored on the cuisine of the Navarra region that showcases seasonal ingredients, its unconditional love for its land, and the championing of small-scale local producers. Dishes worth exploring here include the dish featuring onions from La Mejana, with an accompanying broth,
