The restaurant is an ambassador for the producers they work with, as well as for the great diversity of produce that Turkey has to offer. Everything here revolves around the depth of the flavours, which possess a distinctive Nordic purity. The dishes are not overly elaborate, but their complexity lies in their delicate harmonies. Neolokal bridges the gap between old and new. Respect for Turkish culinary traditions provides the foundation on which this restaurant is able to constantly renew itself. Flavours from the past are the mainstay here, reimagined with contemporary ideas and techniques. Maksut Aşkar and his young team preserve their culinary heritage and guide it into the future with their exciting cuisine. This commitment extends to environmental responsibility, with a vegetarian menu, using carefully selected local produce (including fine Turkish wines!) and working with nearby suppliers. A narrow street leads you to this somewhat hidden gem. The waterside setting is a draw in itself, but the main attractions are the barbecue and tandoori oven. With a sure hand, the chefs flame-grill aubergine, for example, and then season it with chilli and five-spice powder. Their marinated lamb and beef are cooked to juicy perfection, generously spiced and served with lavash bread that has been briefly crisped up on the barbecue. The various mezze, salads and desserts such as halva stay true to tradition. And for this price point, the value is fantastic!

If you want to experience a contemporary side of Istanbul, then head to the eighth floor of Hotel Momento. Its large windows afford views of the city's historical skyline (there is an even better view from the ninth-floor terrace!), and the decor is sleek and stylish. The menu revolves around mezze, kebabs and barbecued lamb dishes. You can watch the chefs at work in the open kitchen, skilfully blending spices and smoky flavours and presenting each dish with impeccable care. For instance, Turkish bread is served with juicy lamb kebab grilled over an open flame, accompanied by creamy yoghurt, p

In either case, you'll be charmed by the mystical ambiance and the staff's enthusiasm and dedication – and that's before you've even discovered the restaurant's modern take on mezze! Traditional Turkish specialities, such as barbecued lamb heart with roast potatoes, share the menu with in-vogue options, including vegetarian dishes. The tasting menu offers a wonderful opportunity to savour delicacies such as flaky pastry fille

Small, cosy and lively, this gastrobistro encapsulates the cool vibe of the Beyoğlu neighbourhood. In the open kitchen, the grill and open flames immediately draw the eye. The chefs handle the fire with skill, bringing the essence of each flavour to the fore – the cuisine is modern, unpretentious and carefully considered. Lamb hearts grilled to a pink finish with white beans in a lamb jus enriched with miso, or crisp-grilled sea bass accompanied by pickled grapes and a lemon beurre blanc: these ingredient-led dishes are nuanced and fun. (The Red Balloon moved to Guney Palace, İstiklal Caddesi No. 153, Beyoğlu, Istanbul) Settle in for a convivial dining experience beneath the sparkling chandeliers of this intimate restaurant, part of the RUZ hotel in the Pera district. The chef works with quality local ingredients, North Aegean influences and Mediterranean freshness to create his own distinctive culinary style. For example, slow-cooked beef neck is pressed into shape and served with a subtly spicy apricot sorbet and tangy pickled matsutake mushrooms. This is inspired cooking that gives familiar flavours an interesting twist. Y
