Caino
Tuscan, Contemporary · ★★ Michelin
€€€€
Nestled in the heart of a charming Tuscan village, Caino is the gravitational centre of Maremma cuisine, with Valeria Piccini its finest interpreter: a skilful seeker of superior materials from a generous territory (which, along with a lovely vegetable garden, produces its own olive oil and some wines), later reimagining them without compromising an ounce of flavour—as in the delicious lamb ravioli or the pigeon stuffed with mashed potatoes and its entrails. For those craving a touch of the sea, there's an excellent risotto featuring cardoncelli mushrooms, lovage, and langoustines or amberjack

Namo Ristobottega
Seasonal Cuisine, Farm to table · Bib
€€
Namo is renowned for the excellent cuisine conjured up by its chef Tiziana Favi, who creates unmissable dishes such as paccheri pasta with tomato and stracciatella cheese served with a bread crumble – you’ll want to mop up every crumb! Make sure you also ask the enthusiastic owner for her food and wine recommendations. Seasonal ingredients from the Viterbo region take centre stage here, while the chef’s green philosophy is clearly explained on the first page of the menu. Book in advance if you want to enjoy the views from the beautiful outdoor space, as there are only a few tables here.

Il Pellicano
Creative, Italian Contemporary · ★ Michelin
€€€€
Chef Michelino Gioia from Campania, now a Tuscan by adoption, is in charge of fine dining at the famous resort Il Pellicano, whose terrace overlooking the sea, enhanced by the scent of rosemary in the air, makes it one of the most romantic addresses in Italy. Michelino, thanks to a good technique, is highly skilled in creating different textures in the same dish while retaining the precise flavours of the excellent ingredients used, both land and sea (excellent, for example, the cooking of the pezzogna, which remains soft, accompanied by small quenelles of pappa al pomodoro in a creamy version

La Parolina
Country cooking, Modern Cuisine · ★ Michelin
€€€€
Just a few kilometres from Acquapendente, a must for those travelling the Via Francigena, in a residential location overlooking the bucolic valley below, Cesare and Romano's Iside offers local cuisine, rich in authentic flavours and local products, with a few technical touches, such as the iced chickpea hummus with a drizzle of local EVO oil, with incredible texture, or the lentil caviar to start. One of the highlights, when available, is the pigeon, delicate and tender, served with a succulent bruschetta with liver ragout and a dumpling in broth. The wine cellar offers good wine, some labels

Situated away from the sea at the foot of a medieval district, this intimate restaurant boasts a historic decor dotted with modern details such as black parquet flooring and industrial-style pipes. The cuisine created by chef Gianluca Formichella demonstrates the same blend of traditional style and modern touches in imaginative meat and fish dishes with a personalised twist. The tasting menu offers excellent value for money.

Pepe Nero
Seafood, Modern Cuisine
€€
Overlooking the western shore of Lake Bolsena, Pepe Nero is an intimate restaurant that wins one over through its modern furnishings and a pleasing maritime character. The service, gentle and professional, discreetly accompanies a predominantly seafood gastronomic journey, conceived for an immersive and unhurried experience of flavour. Guests may opt for themed menus or entrust themselves to the carte, choosing at least two dishes. The wine list ranges across regional and national labels, while in the warmer months a small terrace at the water’s edge affords the pleasure of dining with a direc

L'Oste Dispensa
Farm to table, Organic · Bib
€€
Along one of the two strips of land that join the mainland to the Argentario is this contemporary osteria, minimal but comfortable and equipped with a pleasant veranda that opens in summer, always projecting toward a splendid view of the sea (don't miss the sunset if you can). The cuisine is based on local products, especially sustainably caught fish: not surprisingly, in keeping with this, the wine list features several organic labels. Highly recommended tasting menus that can range from 35 to 45 Euro. Better make reservations because they are extremely popular!

Il Tufo Allegro
Tuscan, Regional Cuisine
€€
In the heart of one of Tuscany’s most spectacular villages, steps from the Synagogue, sits a small restaurant carved into the tufa stone, with intimate dining rooms and a truly well‑stocked wine cellar. The cuisine is authentically Tuscan: tradition and quality meet in every dish, thanks to local ingredients such as extra‑virgin olive oil, meats, cured meats, and cheeses carefully selected from the surrounding area. An experience to savor, with genuine flavors and a timeless atmosphere.
