This restaurant housed in the long-standing hotel Nautilus, right in the historical city centre, exudes a sophisticated bistro atmosphere that blends the charm of bygone eras with a touch of glamour. In summer, the terrace giving onto Žižkov Square is a real draw. Go à la carte menu or opt for a four- or six-course tasting menu; a four-course vegetarian variant is also available. Once you have located the slightly hidden entrance, you find yourself in a world of fermentation, pickling and preserving – countless jars of various vegetables, mushrooms and the like are everywhere you look. The restaurant is pleasingly pared back, and some tables afford an interesting view over the pass into the kitchen. They source all ingredients from the region and, wherever possible, process these themselves. You can clearly see their sustainability concept in action here. The location here is truly amazing, within the grounds of Třeboň’s wonderfully restored castle, which you should definitely explore before or after your meal (there are shops, cafés etc).
