La Trota
Country cooking, Creative · ★ Michelin
€€€€
Before entering this restaurant, stop for a moment to admire the crystal-clear waters of the Santa Susanna canal which runs opposite the building. La Trota has revolutionised and raised the standard of cooking freshwater fish, elevating it to the level of other produce traditionally considered to be more refined. At this restaurant, the Serva brothers, ably assisted by their respective children, showcase ingredients such as trout, tench, freshwater crayfish, pike and catfish, which are sourced from the clean waters nearby and which feature on the menu alongside a few meat dishes. €€
In the heart of medieval Spoleto, nestled within the ancient walls of the Sant’Apollinare convent, this restaurant offers an intimate and romantic retreat. Exposed beams and stone, understated elegance, and a kitchen that celebrates seasonality and terroir, reinterpreting tradition with contemporary sensibility. The menu embraces meat, seafood, and vegetarian offerings. On summer days, a delightful outdoor terrace completes the experience.

Seafood, Traditional Cuisine
€€
Situated within the Clitunno hotel, this well-managed family-run restaurant serves classic, seasonal meat and fish dishes, including generous portions of black truffles in some dishes. Recently refurbished, the intimate, elegant dining room also occasionally features live music at weekends, while the outdoor terrace on the small square offers pleasant alfresco dining. Guests are advised to park outside the ZTL (restricted traffic zone) and make their way on foot, via a short walk through the beautiful historic centre.

Here, chef Carlotta Delicato brings out the best of local ingredients in dishes that are kept deliberately simple and unfussy yet are full of flavour. We highly recommend the “spaghettone mare e lago” with a light brunoise of courgettes. As the restaur
