A refined and elegant restaurant where the modern atmosphere of the dining room may be far removed from the familiar image of the fraschette (the traditional taverns of Castelli Romani), yet the dishes of Matteo Compagnucci and Sara Scarsella represent one of the most accomplished and convincing expressions of cooking in the area. Centred on produce – whether local, such as cave-grown cardoncelli mushrooms, lake fish and herbs gathered from the hills, or ingredients from the sea and elsewhere – the result, enhanced in certain dishes by an effective use of the grill, is of a very high standard.

Creative cuisine with a modern twist for a restaurant that places the Agropontino region and its extraordinary produce at the heart of its culinary creations. The tasting menu, which is seasonal and built around a theme, allows Chef Cotilli to fully express his vision. Proposals include carefully crafted dishes that respect the local terroir and are beautifully presented: from black rice with mussels and beurre blanc to Lara Peri’s pigeon, roasted to perfection and served with castagnaccio and an excellent jus. The outdoor area also serves as a winter garden, filled with plants, bamboo and sof

Run by the Cacciani family for over 100 years, this is one of the most famous restaurants in the Castelli Romani region. Demonstrating a real passion for regional traditions and eschewing modern trends, the menu continues to offer a tempting selection of delicious classic dishes from Lazio, including a couple of fish and seafood options. The focaccia, which is served with the bread, is superb and well worth a mention. The dining room evokes the long history of the restaurant, while the panoramic terrace is a firm favourite with guests.

Situated in a small town just a few kilometres from the capital, this restaurant run by two young food enthusiasts serves regional dishes with a modern touch, such as cuttlefish with asparagus and a Bernese sauce. Guests can visit the interesting tufa-rock cellar, where the chef experiments with old preserving techniques and special flavourings. In addition, the cellar is used as a venue for exhibitions by different art galleries every season.
