A quintessential French country inn in the heart of the Mercantour National Park. Winter dining is by the fireside beneath timber rafters, while the summer terrace frames a breathtaking view of the surrounding peaks. The creative, veggie-centric score showcases premium local produce, including from the establishment’s own garden. Chef Louis-Philippe Riel makes everything from scratch (cured meat, pasta, bread, ice cream) and exalts the purity of raw ingredients with lashings of love. His carte blanche menu changes daily according to availability: fresh green peas with shavings of artichoke, al

At the Col de la Couillole, a pass in the Mercantour National Park, this former refuge run by Pauline and Christophe Billau is a top destination for foodies. These two serve up a warm welcome and a single set menu that draws inspiration from the mountains and changes with the seasons. Diners can indulge in creamy local mountain nettle cappuccino, superb roasted white asparagus, whether tangy with candied citrus fruit or in a sabayon sauce, or lightly smoked Mediterranean tuna served confit-style and subtly counterbalanced by the herbal notes of oxalis. Dishes such as veal from the Plateau de L

Crossing the threshold of the hotel of the same name, a traditional mountain dwelling, guests are welcomed by the immediate warmth of two dining rooms: thanks not only to the crackling fireplaces, but also to the embrace of wood, the understated elegance of the interiors, and attentive service. In the kitchen, animal proteins remain central, while growing attention is given to the plant world, supported by three gardens – two of them owned – that supply much of the produce. The menu features the “HABITAT” tasting journey, more creative and devoted to local products, alongside an à la carte opt

This is the sort of small family-run restaurant that everyone would like to have as their local, where courteous and friendly service go hand-in-hand with good traditional cuisine. Dishes such as ravioli del plin, vitello tonnato, beef tartare and veal tongue are some of the daily specials marked up on the blackboard here. The wine list comes as a pleasant surprise, with its excellent selection of labels from Piedmont and further afield.

Patience and perseverance are required to navigate the winding mountain roads through forests and hills to reach La Pineta, but the cuisine makes the journey worthwhile. The menu focuses on a tasting format that can be customized with fewer courses, and has always featured the restaurant’s iconic dish: fritto misto alla piemontese – a Piedmontese mixed fry. The appetizers are equally impressive, offering generous portions with an array of delightful small tastings.

Nestled amid the stone houses of Limone Piemonte, this charming gourmet restaurant is situated in a typical historic passageway. Influenced by the seasons and the chef’s creative skills, the menu includes interesting dishes such as char, gnocchi with blue goat’s cheese and delicious sweetbreads in butter with cannellini beans and cavolo nero. To accompany your meal, you might like to indulge in a bottle of vintage Barolo chosen from the concise yet carefully chosen wine list. The 2013 Michele Chiarlo Barolo Cerequio, produced in a cold and rainy year, has aged well thanks to its powerful tanni
