Organic is the watchword here, from the mindfully sourced produce used in the kitchen to the furnishings chosen for the restaurant and hotel of the same name – the latter were crafted by local artisans from untreated natural materials. Many of the ingredients are grown in the on-site garden; fermented and pickled foods are also used. The menu tempts diners with options such as medium-rare flank steak of Schönenbach venison with creamy sweet potato. The plant-based options, such as the hand-made gnocchi with colewort and Vetterhof beetroot, are well worth trying. Fans of organic or natural wine

Here, the cooking has been taken back to basics, with the focus placed squarely on the first-rate regional produce. The cuisine of Felix Messner – who runs the restaurant together with his brother Florian – is inspired by Austria and Vorarlberg. The simplicity of the fresh, flavourful dishes (eg breaded fried chicken, potato salad, pumpkin seed oil) is in keeping with the decor in this timber building on the village square, which was erected in 1756 and renovated according to historical models. Warm wood panelling from floor to ceiling makes for a cosy interior. There are also smart guest room

The town-centre hotel, Krone Hittisau, dates back to 1838. Today, the restaurant on its first floor serves regional and seasonal cuisine. Fantastic ingredients are showcased in delicious dishes such as fillet of char with coriander lentils, ginger and lemon foam, and ricotta gnocchi. Diners can also look forward to charming and attentive service in a thoroughly inviting setting. The tasteful blend of clean lines and warm wood finishings (all the lovely furniture is made by carpenters from the Bregenz Forest) can be found both in the guestrooms and the restaurant.

At this restaurant, you can see the mindful idea in practice, not least in Felix Groß's cuisine. He cooks with a close eye on the seasons, and almost all ingredients are sourced from the immediate vicinity – within a 100km radius. The ibex ragout with pumpkin espuma and tarragon, for example, is very carefully prepared and really delicious. Be sure to save room for one of the desserts, such as salted caramel ice cream with blueberries and walnuts! Modern lines and a touch of rusticity are combined in the decor. The open kitchen and large shelves stacked with all kinds of products that are avai

The mindful concept shines through in Jonathan and Raphaela Burger's cuisine. Ingredients are sourced in the region, the fruit and vegetables are predominantly organic or grown by neighbouring farmers, and a nose-to-tail approach is applied to all produce. The latter philosophy is evident, for example, in a dish of grilled chicken hearts, pumpkin and Schupfnudeln (finger-shaped potato dumplings). They also enjoy cooking vegetarian fare, especially in winter when in-house fermentation plays a major role – for example, their "Vetterhof radish³, gochugaru, miso stock". The setting is gorgeous: au

This restaurant is named after the year in which Das Schiff, the tasteful hotel that houses it, was founded. Done out in an abundance of wood and featuring delightful decorative details such as pictures and lamps, the dining nooks with their classically laid tables are the epitome of cosiness. In his set menu, chef Bernd Reimer places great emphasis on regionality, but also incorporates international flavours. The quality of the produce is exquisite – as exemplified by Black cod with miso, salicornia, chanterelles and wild garlic gnocchi. Dominated by labels from the tri-border region, the win
