Under the term ‘ether’, derived from the Greek word for 'sky' or ‘firmament’, this restaurant gives physical form to the dream of the Tofé brothers, Sergio and Mario, who share the load, the former as chef and the latter as maitre d' and sommelier. The unassuming premises, just a few minutes' walk from Plaza de Legazpi, is intimate and minimalist, decorated with paintings by different artists. They favour a contemporary cuisine that is not devoid of personality, with interesting Latin American influences (especially from Mexico and Colombia) that speak to their experiences with chefs from the

This restaurant, which is beaming with a new energy after a change of location, surprises and leaves everyone wanting more from its culinary proposal. Here you can enjoy traditional market cuisine, with modern touches and nods to other cultures, which finds in the embers the common thread of many elaborations. There is also an interesting tasting menu. The most outstanding dishes were their popular grilled Hass avocado, the Santé steak tartare (prepared in full view of the diner). To finish, try the very creamy and completely deconstructed cheese tart.

Under this name, which nods to the Japanese art of binding and could be translated as ‘bond’, we find a humble and informal restaurant that specialises in Japanese grilling and showcases robata cooking as its hallmark. They offer an à la carte service, but we recommend the Omakase menu, as it takes you on a varied journey through their most significant dishes, such as the snow crab Monaka with smoked baby eel or their tasty brioche with prawns cooked on the robata, lightly seasoned with seven Japanese spices.

An intimate restaurant with a rustic feel, run with great skill by two chefs. Classically inspired cuisine with a contemporary touch and a focus on strong, defined flavours.

Chef José Kobos Cortés says that “we eat every day but to smile while we do so is something else altogether”. Here, just a few metres from the Cebada market (in the La Latina district), he has created his Japanese-inspired cuisine (he spent a year working in Japan under the baton of culinary maestro Norihito Endo) around solid technique and the seasons. In this unpretentious restaurant, where everything revolves around a small sushi bar, he conjures up a single Omakase menu that normally starts with a green tea to welcome you (and which is then constantly refilled). Before starting the tasting
