De Kristalijn

Modern French · ★ Michelin

€€€€

De Kristalijn cannot fail but catch the eye. The modern edifice in which it is housed seems to hover over the surrounding golf course. Floor-to-ceiling windows command knockout views, while trendy furnishings and designer lighting underscore the establishment’s stylish character. Seasoned chef Koen Somers weaves his magic in the entirely open-plan kitchen as he crafts food depicted by purebred technique and generous ingredients. The chef harnesses his creative streak in a painstaking and precise approach to cooking. Premium seabass is cooked in its skin for crispiness and flanked with a medley

La Botte

Italian · ★ Michelin

€€€€

Peppe, the chef, and Gaspare, sommelier, are writing a new chapter of a culinary story that the Giacomazza family has been carefully composing for decades. Peppe and Gaspare are the second generation and they continue to celebrate Sicily courtesy of a refined, often original score that rolls out generous, 100% authentic flavours of fabulous delicacy.Italy’s rich ingredients are a secret for no one. Chef Peppe nonetheless manages to surprise by the quality of his produce, like gambero rosso, semi-cooked in a creamy risotto crafted with buffalo milk butter, or a gutsy bisque of shrimp heads enha

Moonstone

Modern French · Bib

€€

An illuminated moon sculpture dominates the grey colour scheme, hence the name of this eatery housed in Hotel Stiemerheide, which also commands a pretty view of the golf course. Chef Sander Roos celebrates premium produce in recipes that combine up-to-date, yet familiar flavours. His forthright, wholesome cooking is rich, pure and expressive: gravlax of salmon or juicy cockerel in a tarragon-flavoured poultry stock. The set menu is a must, but the à la carte lineup is also extremely sensibly priced. Check out the all-inclusive Sunday package (with a meal and accommodation)!

La Source

Modern French

€€€€

La Source is fully the equal to the swanky, elegant La Butte aux Bois, a five-star Michelin key holder, in which it is housed. In addition to a weakness for outstanding ingredients, chef Ralph Hermans’ score unveils a scattering of exotic notes, spot-on cooking techniques and a modern-day ethos. He may pair Challans duck magret, cooked medium rare, with a subtle five spice sauce, ponzu jelly and sautéed girolles. The final flourish to this outstanding fine dining experience comes in the shape of the impossibly enticing sweet titbits that are served with coffee.

Bistrôt Le Ciel

Classic French, Italian Contemporary

€€€

The sky is visible through the glazed roof and tropical plants and contemporary artwork set the singular scene indoors, while the terrace is taken by storm in fine weather. The food features a pageant of polished French fare with the occasional Italian twist, illustrated by terrine of foie gras or venison in a Grand Veneur sauce. Consummate craftsmanship and a reverent respect for culinary tradition.

Magnific

Modern French

€€€

Lounge music in the background, colourful butterfly and flower decorations and the warmth of Limburg’s hospitality: a meal at Magnific is always a treat. All the more so, as the chef savvily mixes French and Italian scores, throwing in the odd Asian twist. Examples range from a mandarin and wasabi-laced salmon tataki to tournedos Rossini or lobster with tagliatelle and tomato sauce. Whatever the dish, you can rely on the chef’s stellar craftsmanship and grasp of full-bodied flavours to come up trumps every time! Choosing between the à la carte and set menus always presents something of a chall

La Strada

Italian

Contemporary restaurant faithful to Italy’s culinary heritage. Chef Pierro hails from Umbria and Tuscan cuisine has no secrets from him. His truffle recipes are standout. His son, Valentino, adds his youthful enthusiasm in the kitchen, while Myriame’s gracious welcome completes this family affair.

NOVO New Dining

Modern Cuisine

Rodny Welters has created his own little world on the fifth floor of this factory building in Maastricht's Sphinxkwartier. Rugged surfaces meet stylish upholstery here in a tasteful symbiosis. All eyes are on the open kitchen, where chef Welters lets his cooking do the talking; his culinary creations draw inspiration from around the globe, underpinned by exquisite sauces. With dishes such as haddock à la meunière with a tandoori velouté or fried scampi with a red curry and coconut milk sauce, the "Experience" set menu certainly lives up to its name.
