With a slogan like Volg de natuur ("Follow nature") and a name that refers to the fertile, clay-rich soil of the area, it is immediately clear that terroir is a key focus at Lutum. This vision is carried through into every aspect of the restaurant. The decor has a natural Zen feel, with an abundance of decorative features reminiscent of trees. The menu showcases the freshest ingredients sourced directly from local gardens and food forests. The surprise menu, designed to minimise waste, highlights local produce and adds an international twist with ingredients such as koji and miso. Parc Broekhuizen takes full advantage of the natural beauty that the Utrechtse Heuvelrug has to offer. Dining in this impressive historic country house, overlooking the beautiful estate and ponds, is a special experience. The terrace is a piece of paradise on earth. The relaxed music and subtle modern design give this beautiful setting just what it needs. The chefs break through that tranquillity with distinctive, sometimes daring flavours. They spice up their creative flavour combinations with fresh acids and refined garnishes. For example, they serve langoustine glazed and fried in a tartare

Picture the scene: You are in the lovely town of Buren, and step into an elegantly converted barn in anticipation of an intimate dinner. You are served dishes that embody a refined modern take on French cuisine. This chef brings a clear culinary vision and deep, expressive flavours, uniting local and international influences. A particular standout: pan-seared cod with asparagus and set egg yolk, crispy pommes dauphine and a rich hollandaise espuma. The appealing à la carte selection and set menu are well worth exploring.

André van Alten is a fine example of a chef who continually reinvents himself while remaining grounded in his core principles. The unwavering quality of the ingredients, the expertise with which wild duck is roasted on the bone and the depth of the turbot jus complementing an ultra-fresh cut of the fish all showcase his impressive classical training. We also applaud the chef's eagerness to share his experience with younger generations. His ability to keep a cool head as he leads his team in the open kitchen is remarkable. But the chef does not stop there and keeps innovating. He showcases his

Admire the grandeur of this fully restored 17C château as you take the road up, walk across the little bridge and immerse yourself in its attractive blend of historical features and contemporary luxury. Heemstede Castle is an exceptional and enchanting location, and in Ollie Schuiling it has a very talented chef at the helm. You can expect a few surprises on the wine list, including some sought-after gems from Europe, as well as a nod to the Netherlands. The wines perfectly complement the intense flavours of the chef's dishes. Exceptionally fresh top-quality produce, sublime sauces and inventi

Chicory (lof in Dutch) grows in the kitchen garden that surrounds this laid-back restaurant, which is modern with a raw edge. Set in a converted farmhouse on the Parc Broekhuizen estate, where diners sit beneath the handsome timber roof trusses, the design brings nature indoors, creating a soothing, zen-like atmosphere. The chef cooks in step with the harvest, showcasing Dutch produce and using spices to add verve. A dish might feature cherry tomatoes plucked straight from the garden and herbs folded into a mayonnaise to accompany briny mussels, chopped watermelon and a complex mussel jus with

The wooden horse heads on the walls, the impressive chandeliers that call to mind the wheels of a horse-drawn carriage, the partitions between the tables: you can't help but notice that you're dining in the former stables of Amerongen Castle. The terrace overlooking the castle and gardens is breathtaking! The cuisine is characterised by its use of locally sourced ingredients, French cooking techniques and a global outlook. The duck gyoza in a rich game broth with marinated mushrooms and crispy scallions says it all!

Once the town hall, this is the ideal place for convivial dining. Original features provide a striking contrast with the modern design and warm colours. Indulgence is the name of the game when it comes to the food. Whether you opt for the rich lobster bisque, the sea bass with the rich beurre blanc or their contemporary take on tiramisu, you will be bowled over by the skill and charm of Niels Minkman and his team.
