In an idyllic setting, Daniel Schmidthaler serves up an exciting and modern surprise menu comprising five or seven courses in the very classroom where pupils once studied. The menu changes daily thanks to a constant supply of seasonal ingredients, freshly sourced directly from the region. The result is dishes prepared with his own signature style, refined with aromatic herbs from the immediate vicinity and presented in a pleasingly minimalist way.
