Signum
Sicilian, Contemporary · ★ Michelin

Young chef Martina Caruso was born and raised at Signum, and after gaining formative experience elsewhere, decided to return home to personally take charge of the kitchen. Today she leads a brigade of nine, while her brother Luca manages the enchanting hotel built in the style of a typical Aeolian village. Martina knows how to make the best use of the vibrant products from her land, her garden, and the sea; she doesn’t deny their power, skillfully playing – with lightness and creativity – even with the intense salinity of certain ingredients, not masking it but enhancing it. Arrive at the restaurant before sunset to admire a spectacular view of the Aeolian Islands: the setting is breathtaking, and the extraordinary “plant-based” cuisine, as defined by Chef Davide Guidara refusing the stereotypes of “vegetarian” or “vegan”, is sure to move you even further. From his open-view kitchen, a single surprise tasting menu is offered (price included), conceived as a journey through numerous often playful tastings. Guidara, previously awarded as a Young Chef, shows great skill in highlighting the winter produce from his garden through preservation techniques such as ferment

The kitchen here reaches a standard of absolute distinction. The two tasting menus, one more concise, one more extensive, present a proposition built upon the full and recognisable flavours of fresh, predominantly local produce, handled with solid technical skill within a contemporary Mediterranean idiom. Cultured references are not lacking, such as the measured use of French-inspired sauces or the judicious application of fermentation, lending depth without heaviness. The dessert chapter is a true final indulgence: after a first tasting served at table, the experience continues at a dedicated

Although the view from this restaurant takes in the sea and the mountains alike, it’s the latter that inspires the menu. It features inland specialities cooked with the best local ingredients. Suckling pig is a particular favourite, appearing in a number of different guises, including cured ham and meat sauces. The restaurant also offers new, welcoming guestrooms.

Having moved behind its old premises during 2025 (now home to TuMa, a modern osteria run by the same team), chef Tony Lo Coco’s new restaurant now occupies the lower part of the Villa Palagonia, a large historic 18C palazzo once visited and described by the poet Johann Wolfgang von Goethe. The cuisine continues to focus on Sicilian recipes and ingredients (meat and fish alike), which are personalised and imaginative, showcased on four tasting menus and an extensive à la carte. Various elegant dining rooms, a chef’s table for four guests who can observe the chef working close at hand, a well-st

In a town renowned for its splendid villas built by the Palermo aristocracy, this restaurant occupies a small 16C tower on the edge of the historic centre. The name is a tribute to lemon, a fruit that grows in abundance in Bagheria. The restaurant has two elegant, contemporary-style floors, where dinner starts on the small terrace-cum-lounge – the setting for sampling a whole host of delicious appetisers. This is guests’ first encounter with a technical and creative cuisine that sensitively uses the finest local ingredients, while often following paths born from personal and imaginative ideas.

This restaurant, named after the ancient Sicilian musical mouth instrument similar to a small flute and used in folk music, is located in the heart of the historic center. It features a spacious outdoor area for the summertime and interior spaces that predominantly use materials such as wood and stone. The cuisine pays homage to traditional local dishes, expertly crafted and "revitalized," using ingredients that mostly come from the Madonie Park where the location is situated. The mushroom specialties are not to be missed, and the wine selection is also excellent.

A simple, almost rustic restaurant in the pedestrianised historic centre of one of the medieval villages that add to the special attraction of the Parco delle Madonie. Here, the owner prepares seasonal cuisine which is firmly anchored in the region, made from ingredients from the surrounding area. The antipasto is always good, and is served as a selection of five or six small bites made from vegetables, cheese and meat, as well as mushrooms. The home-made bread is excellent – the natural leavening process takes almost four days. A good wine selection completes the picture.
