The Corman brothers have been at the helm of this vintage looking restaurant for over 25 years. In the Absinthe bistro, the accent is on soul-warming fare such as Chimay-flavoured cheese fritters, duck cassoulet and veal stew. We also recommend the Bib Gourmand menu that is more polished, but equally Gallic in leaning. For example, the chef might pair salmon marinated in herbs with different textures of red beetroot, green apple, a gherkin mousse and a few dabs of balsamic vinegar. This delicate feast can be washed down with one of the fine bottles that come from the next-door wine shop. To fi

Fanny and Jérôme bend over backwards to nurture the warm cosy vibe of their establishment, which also offers a few convenient guestrooms. Fanny’s indefectible good cheer and Jérôme’s infectious enthusiasm in his open kitchen set the stage for this culinary performance. The chef shines the spotlight on regional and local producers, with a weakness for veggies. He adds a modern twist to recipes that pay tribute to the region’s traditions and generous character. Augustin Massinon and Darius Van Hoef have returned to their roots as they roll out their nature-inspired gourmet concept. First of all, they tastefully refurbished this Ardennes edifice whilst maintaining its authentic character. We recommend booking a table downstairs to make the most of the view of the open kitchen. The chefs, who are committed to using locally sourced produce as much as possible, pool their creative talents to craft beautifully plated dishes. Impeccable handiwork underscored by local ingredients, exotic seasonings and fermented flavours, examples of which include a tartare

This Ardennes hostelry on the banks of a pond and surrounded by forest is Instagram perfect. The huge picture windows and terrace command an idyllic view over the magical location, which is further enhanced by a smart, trendy interior. Chef Borg Da Silva rolls out his mastery of classical French cuisine, as the cavalcade of polished dishes flanked with big-boned gravies illustrates. An example: medium rare duck breast with a succulent layer of fat, paired with a blueberry jelly, al dente salsifies dusted with horn of plenty mushrooms, dauphine potatoes and a subtle veal gravy.
