La Cuchara de Ruba

Traditional Cuisine · Bib

In this small Pyrenean town, everyone is talking about La Cuchara de Ruba, a restaurant with the sole aim of perpetuating the legacy of Ramón Ruba, a leading name in the local hospitality sector. It could be viewed as the younger sibling of Vidocq (in Formigal, part of the Sallent de Gállego municipality), as chef Diego Herrero has brought his own cuisine here while respecting, to a certain extent, the essence of the erstwhile Casa Ruba. In the simple dining room, with its highly informal service, the menu (which changes almost every day) is contemporary in style and based around recipes from

La Era de los Nogales

Located in a tiny village in the Alto Gállego region of Huesca province where its glass marquee-style design amid typical stone buildings comes as something of a surprise with the stunning backdrop of the Aragonese Pyrenees and its magical sunsets as a bonus! Here, chef Toño Rodríguez conjures up contemporary yet traditionally based cuisine that impresses with its high quality and flavour and a focus on local, seasonal ingredients with a nod to the classic dishes of the region (the appetisers, enjoyed at a small bar, are a tribute to the three provinces of Aragón) as well as those from his chi

A restaurant with a rustic atmosphere that is considered a classic destination in the Valle de Tena. Occupying what was once a stable, it is now run by a young couple, with Sergio Sainz at the helm in the kitchen and Carla Frigolé in charge of the dining room. Lavedán has definitely moved with the times while retaining its full personality through its focus on the culinary traditions of the Aragonese Pyrenees area and its 'mountain gastronomy'. The cooking here is based around an updated take on local and regionally inspired dishes (their wild boar tongue in elderberry marinade won the award f

Canfranc Express

A great gastronomic experience? Here, given that the gourmet option is concentrated around three exclusive tables, you can enjoy it if you book well in advance; perhaps unsurprisingly, this captivating restaurant is located in the emblematic Canfranc Station (now a luxurious Royal Hideaway Hotel), inside an old carriage capable of transporting you back in time. The experience, which begins with historical details on the platform and includes a stop for aperitifs in the 1928 carriage-restaurant (offering a more French-style cuisine - in the evenings, run by the same team), is accompanied by a c

Cambium Pirineos

Located in the centre of the village, Cambium, which is Latin for “change” and is also the word to describe one of the outer layers of a tree trunk, is keen for guests to discover the flavours of the Aragonese Pyrenees from a different perspective. In its pleasant, rustic-style dining rooms, featuring a profusion of wood and views of both the village and its impressive surrounding mountains, choose between an à la carte option or two seasonal menus on request (Olla Tensina y Summum) with dishes such as marinated Oliván trout and IGP Aragón veal, which connect us with the culinary traditions of

Vidocq

Named after the Frenchman considered to be the world’s first private detective way back in the early 19C, Vidocq is a superb option for those who prefer not to venture too far from the nearby ski slopes. The contemporary, fusion-style cuisine here toys continually with flavour, incorporating interesting Asian nuances (particularly from Thai cooking) into typical Aragonese mountain recipes (the vast majority of its ingredients are sourced from small-scale local producers). A single seasonal set menu (La Montaña Nómada) is the mainstay here, inviting guests on an evocative gastronomic journey th
