A restaurant that pays full homage to its ingredients, the sea and the lasting legacy of La Coruña’s fishing tradition. This spacious and somewhat surprising eatery, occupying a former industrial workshop once used to manufacture electrical coil pumps, features various event spaces plus an interior patio on which to enjoy a post-lunch or -dinner digestif or coffee. As you would expect, the cooking is centred around its impressive fish and seafood which is shown to guests at the same time as the menu. Choose between four options (each with a set main course that changes daily, plus a choice of

Galician lobster awakening on the beaches of Goa, drunk crabs partying in Jerez, the Minutejo del Agus... The hedonistic cuisine of Dabiz Muñoz is fun and irreverent in many details, and breaks the barriers of the gastronomic avant-garde to enter a highly personal dreamlike plane, inviting the diner to live a roller coaster of emotions. In his striking establishment they serve a unique tasting menu, called ‘The Kitchen of the Flying Pigs’, which takes you on a spectacular journey through the different cuisines of the world, with special emphasis on Asian fusion but with the regular use of Spani

Here, in the impressive Madrid outpost of sommelier and restaurateur Marcos Granda, the owner of the famous Skina restaurant in Marbella who has brought this different dining option to Madrid, the kitchen and the wine cellar take on equal prominence. This eatery, with its contemporary ambience, is the perfect setting in which to enjoy modern cuisine with a creative tint, based around the traditional flavours and the best ingredients from around Spain. Here, the gastronomic approach is epitomised by Clos Madrid’s mantra: great restaurants are those that make guests feel important. The name Clos

RavioXO

Chef Dabiz Muñoz reminds us that RavioXO is ‘the luxury of eating time’, a perfect metaphor to express all the work that goes into making each filling and each sauce for their pasta. They redefine the concept of ‘dough’ in a haute cuisine proposal! The spacious restaurant, with beautiful interior design by the Lázaro Rosa-Violán studio, is run by chefs Raúl Bernalte and Valerio Gargiulo. They reflect, through both the à la carte and its tasting menu (Festival 360º), a fusion that covers almost all of Asia, incorporating sauces, wok techniques and exotic raw ingredients (yozukosho, Korean tempur

Rodrigo de la Calle defines himself as a culinary ambassador for the plant kingdom, a valid claim given the efforts he has made to champion our natural surroundings and his role as one of the pioneers of “green haute cuisine”.In his restaurant, with its open-view kitchen behind the bar counter, guests can observe dishes being prepared in front of them and interact with the chef, while at the same time discovering his culinary philosophy, which is more gastronomic and introspective in the evenings (for lunch, without losing its essence, it is a little more informal), which makes vegetables the

Pabú

A restaurant that is definitely in vogue and one which continues to gain new fans – even the royal family celebrated a birthday here! Located close to the legendary Santiago Bernabéu football stadium, Pabú reflects the gourmet vision of Coco Montes, a Cordon Bleu chef who has worked in prestigious restaurants such as Arpège in Paris, under the baton of famous chef Alain Passard. His cooking is based around the purity of ingredients, hence his championing of micro-seasonal cuisine that changes daily in line with provisions from his suppliers and is highly focused on vegetables, with little prot

Chef Javi Estévez, who revolutionised Madrid’s culinary scene by elevating humble offal to the realms of haute-cuisine, made the right decision when he moved to this establishment, larger and more welcoming than the one where he took his first steps to success (that establishment still maintains his essence, in a bistro atmosphere, under the name La Barra de la Tasquería).This space on Calle Modesto Lafuente, which has taken a new direction under his hand, remains faithful to an idea that is part of its DNA: ‘we are specialists in cooking offal, but we do other things as well.’ The dining expe

A contemporary restaurant with an open-view kitchen, two counters and a Japanese ambience that is far from lacking in personality. Its meticulous, constantly evolving cuisine could be described by quoting the Greek philosopher Heracles: “No man ever steps in the same river twice”. In his restaurant, which shares the nickname given to him by his grandfather when he was a boy (“Hugochan”, or “little Hugo”), chef Hugo Muñoz conjures up Japanese cuisine (on an à la carte and a personalised Omakase menu) in which seasonal ingredients take centre stage, incorporating enjoyable influences from other
