A great gastronomic experience? Here, given that the gourmet option is concentrated around three exclusive tables, you can enjoy it if you book well in advance; perhaps unsurprisingly, this captivating restaurant is located in the emblematic Canfranc Station (now a luxurious Royal Hideaway Hotel), inside an old carriage capable of transporting you back in time. The experience, which begins with historical details on the platform and includes a stop for aperitifs in the 1928 carriage-restaurant (offering a more French-style cuisine - in the evenings, run by the same team), is accompanied by a c

It is well worth visiting this mountain village to eat at this restaurant occupying a typical “chesa”-style house with an impressive old vine adorning the façade. Enjoy a drink in the public bar before heading upstairs to the attractive rustic-contemporary dining room featuring bright dining spaces, a minimum of furniture and impressive lighting. Here, owner-chef Alfredo García, showcases a traditionally inspired menu brought impressively up to date that always tries to champion seasonal and locally sourced ingredients. Canteré’s food-themed events are also highly popular, one of which is devo

In this mountainous area on the edge of the Basque Country, this traditional establishment is simply charming. It is also the repository of a family history going back four generations. Ximun has now taken up the mantle, serving delicious traditional cuisine, characterised by generous portions and tasty well-matured broths and jus. The ingredients are local, and the suppliers are duly listed on the menu. This is comforting fare (think duck raviolo, mix of mushrooms, langoustine bisque; "Axuria" lamb: pressed lamb, macaroni gratin, Xipister, lamb jus), to enjoy in the bright, somewhat rustic-st

A restaurant with a rustic atmosphere that is considered a classic destination in the Valle de Tena. Occupying what was once a stable, it is now run by a young couple, with Sergio Sainz at the helm in the kitchen and Carla Frigolé in charge of the dining room. Lavedán has definitely moved with the times while retaining its full personality through its focus on the culinary traditions of the Aragonese Pyrenees area and its 'mountain gastronomy'. The cooking here is based around an updated take on local and regionally inspired dishes (their wild boar tongue in elderberry marinade won the award f

La Cuchara de Ruba

In this small Pyrenean town, everyone is talking about La Cuchara de Ruba, a restaurant with the sole aim of perpetuating the legacy of Ramón Ruba, a leading name in the local hospitality sector. It could be viewed as the younger sibling of Vidocq (in Formigal, part of the Sallent de Gállego municipality), as chef Diego Herrero has brought his own cuisine here while respecting, to a certain extent, the essence of the erstwhile Casa Ruba. In the simple dining room, with its highly informal service, the menu (which changes almost every day) is contemporary in style and based around recipes from

Trout from Lau-Balagnas, rabbit from Julos, lamb from Val d'Azun, carrots from Lézignan, dairy produce from Ferme Sayous, coffee roasted in Sassis: Céline, the sommelier and restaurant manager, never misses a chance to sing the praises of the super-local ingredients that her chef partner, Mathieu, expertly crafts into succulent dishes. After training in top establishments (including L'Artichaut, Montpellier), the couple has found their way to our hearts via our stomachs and our tastebuds: organic egg, cream of Jerusalem artichoke, sweet onions, emulsion of star anise; squash-flavoured brioche

In the heart of the old town of Pau, twin brothers, one a chef and the other a pastry chef, have successfully launched their family business in a modern bistro-style setting laid out over two floors, complete with a pastry counter and tea room. The menu is a real draw, and also represents great value for money. This talented pair bring a touch of magic to their apparently simple dishes, drawing on sweet and sour jus and a medley of condiments to enhance their ingenious and generous, yet always light cuisine. Think confit pork belly, barbecue jus, pickled vegetables, radishes, polenta croquette

Two minutes from Pau Château, on the picturesque Place Gramont, imagine a nostalgic bistro with a zinc-topped counter, wood panelling and upholstered seating. Pau's foodies flock here, sharing good vibes as they tuck into fish fresh from the fish auction or 24hr shoulder of pork. The slate menu features traditional nosh served generously and sometimes enhanced by touches of citrus fruit or well-balanced smoky notes. The jovial front-of-house staff are an added bonus.
