Under this intriguing name, which is a celebration of an almost forgotten dish from Extremadura, this simple restaurant attempts to revive traditional regional flavours from a modern perspective. The young duo at the helm, Josemi Martínez and Mercedes Rincón, are embarking on their own personal project here after working in some of the finest establishments, some even outside Spain. Both chefs, who throughout their careers have always been ambassadors for the products of their home region, uphold traditional Extremaduran recipes using modern techniques and the best local seasonal produce, brin

Atrio exudes elegance, enthusiasm and sincerity, matched by impeccable service to enhance the dining experience to the full. For guests keen to stay over, the superb guestrooms available at the hotel-restaurant are complemented by the eleven highly luxurious suites at the Casa Palacio Paredes Saavedra, barely 30 metres away. Located in the part of town most popular with tourists, this restaurant is a leading name in Zafra’s culinary heritage. Now completely renovated, it has taken on a new lease of life in the hands of the couple running it. Carmen and Javo, who met at the one-Michelin-star El Invernadero in Madrid, decided to head off on their own and, in so doing, transformed the cuisine on offer here, skilfully combining the cooking of Extremadura with that of Argentina in a nod to their respective origins. Only one concise menu is available, although medias raciones are also an option.

Located just a few steps from the city’s historic Alcazaba, and standing above some of Mérida’s Roman remains visible through a glass floor, this restaurant is definitely worth considering for tapas, a meal or just a drink given the pleasant Roof Bar on the first floor. The cuisine here, including a good selection of Joselito-branded starters and select grilled meats, also features two tasting menus (4 and 8 courses), the longer of the two with a wine-pairing option.

Trujillo, commonly known as the town of the conquistadors, reveals a new side to itself if you visit this stone mansion, located in the heart of the old town. The restaurant, which has taken on a new lease of life having passed down a generation, has been modernised and surprises guests with a delightful terrace on an internal patio, where dinner is usually served. Here they prepare traditional Extremaduran cuisine with contemporary innovative touches, in which oak embers are the undisputed stars of the show. It is no surprise that chef Mario Clemente worked for nearly a year at the legendary

Located southwest of Miajadas, within the Finca La Desa complex and hotel, this restaurant brings its finest cuisine to the table. Guti Moreno, the young local chef, presents two tasting menus with a modern twist ('Tupío' and 'Gran Tupío'), adding dashes of creativity while remaining respectful to the flavours of traditional recipes. In fact, he regularly goes hunting, foraging for wild produce and gathering from the surrounding vegetable gardens. We particularly enjoyed the cod roe 'à la importancia' and the wild boar ribs with smoked piparra peppers and pochas viudas beans. As for Tupío? It

Well located in the town’s historic quarter, La Rebotica occupies the interior of an old house that has managed to bring itself up to date while maintaining its welcoming rusticity. Its updated take on traditional cuisine, with a focus on Retinto beef as well as cod dishes, is well supported by a good selection of Ribera del Guadiana wines. Don’t miss the delicious “trilogy of Iberian meat (“presa”, sirloin and “secreto”)!

Located in the modern Nuevo Cáceres neighbourhood, this restaurant impressively run by Javier and Esther is defined by them as their “life project”, where you can choose between contemporary-style cooking on an extensive à la carte and several tasting menus (Del Chef, Esencia, Origen and Experiencia Javier Martín) on which seasonal and locally sourced ingredients play a prominent role. Interesting dishes include the carpaccio of Iberian ham, foie gras and “tierra de Ibores”, red partridge stuffed with Pedro Ximénez, truffles and foie gras, and grilled wild red mullet, with salted flakes and ol
