Tony Hohlefeld and his talented kitchen team steer clear of showmanship and unnecessary frills in their bid to bring precise craftsmanship, technical finesse and original ideas to the table. For all the work, complexity and detail that goes into the food, it is marked by an appealing lightness of touch. A subtle personal flourish shines through in dishes such as delicately pan-seared pigeon, the natural flavour of which is enhanced by well-judged seasoning, complemented by subtle notes of elderberry as well as the contrasting flavour of marinated cucumber. No compromises are made when it comes

An upscale, trendy and minimalist design, outstanding creative modern dishes, and informal yet competent service – this restaurant meets the brief of "Casual.Fine.Dining". This place is aptly named, in that craftsmanship (Handwerk) plays a major role in the open kitchen, the domain of chef Thomas Wohlfeld. He brings a winning combination of original ideas, Nordic elements and the odd subtle Far Eastern twist to the table. Dishes such as "skrei, beetroot, green strawberry" or "pork, red cabbage, quince" are pleasingly clear-cut and ingredient-led; they come as a set menu comprising five or six

Creative, Modern Cuisine · ★★ Michelin

Regional culinary star Benjamin Gallein wows diners with subtly creative cuisine in the form of flavoursome dishes that pack a punch. The restaurant is on Platz der Göttinger Sieben, close to the Leine River. It is housed in the modern extension of the historical Leineschloss, a palace that is also the seat of Lower Saxony's state parliament. The name "Votum" is a reference to the choices to be made by diners: the order of the courses, optional upgrades, and wine pairings (standard or "premium") or alcohol-free alternatives. Their original signature dish, "Lobster, shellfish hollandaise, tarra

This cosy little restaurant surrounded by historical buildings occupies a corner plot in Hanover's Oststadt. Its modern decor also capitalises on elements of the original architecture. High ceilings and lovely period floorboards meet clean lines, soothing warm hues, candlelight and soft background music to create an inviting atmosphere. In the kitchen, chef-patron Sven Holthaus prepares contemporary dishes based on classic French cuisine, skilfully incorporating Asian accents here and there. The set menu (vegetarian version available) comprises four to six courses and features dishes such as b

This young and vibrant addition to the local fine dining scene is proving to be a hit – and with good reason. Part of the appeal is the upscale and tastefully trendy decor. And then there is the modern and pleasingly pared-down cuisine, in which French and Asian influences are deftly interwoven. Dishes are presented in the form of a five-course set menu, available in both a classic and a vegan version, with the option of an additional course. Their signature dish is "The Wild Duck, Thai curry, pear". The friendly waitstaff will gladly recommend the perfect wine pairing. Tip for getting there:

The atmosphere in this attractive historical corner-plot building is pleasingly casual. Featuring high ceilings, warm wood panelling, cosy booths and large arched windows, the pretty dining space has the feel of a classic bistro. There is also a bar, and in summer a terrace is set up out front, giving onto the street. The menu includes flavoursome dishes such as oysters, beef tartare, fine fish dishes and premium steaks. Tempting options on the shorter lunch menu include veal meatballs with carrots and mashed potatoes.

This pleasingly down-to-earth restaurant is the second in the cube-like extension of the Leineschloss, along with Votum. The flavoursome food is made with select ingredients and draws on French influences. Delicious examples include the fish soup or the Charolais beef bourguignon. It's lovely to dine on the terrace with views onto the weir (Leinewehr) or the square, Platz der Göttinger Sieben.

With delicious food, friendly service, a welcoming and charming vibe, this restaurant in a residential area just outside the city centre is a magnet for diners. The contemporary cuisine makes use of predominantly regional produce. The meticulously prepared and beautifully plated dishes are served in the format of a four- or five-course set menu, with vegetarian alternatives for the meat/fish courses – and it is possible to opt for the "upgrade", an additional course. Wine or alcoholic drinks pairings are available. The space is sleek and modern yet cosy, and tables are set up on a terrace on t
