Gaytán

Modern Cuisine · ★ Michelin

€€€€

Gaytán is the culmination of a dream which then became a reality for chef Javier Aranda and as a result is far from your usual type of restaurant. This space, which features an interior with many design details and two private lounges, is dominated by original wooden columns that flank the large open kitchen overlooking the dining room, so that guests feel as though they are part of the creative process. The cuisine, complemented by a small menu for business customers during the week, aims to showcase what they describe here as the “the joys of the season”, something they succeed in doing via

Smoked Room

Contemporary · ★★ Michelin

This restaurant is somewhat reminiscent of a clandestine dining space, and as such a meal here is quite the experience, where the team in the kitchen play ingeniously with smoky flavours and aromas without ever overwhelming the palate. Located in the Hyatt Regency Hesperia Madrid, Smoked Room has its own entrance and views itself as a highly exclusive dining space which is separate from the Leña Madrid restaurant and has its own valet parking service. The aesthetically pleasing dining area has an intimate, meticulous feel and features a striking Japanese-style bar facing the kitchen as well as

Galician lobster awakening on the beaches of Goa, drunk crabs partying in Jerez, the Minutejo del Agus... The hedonistic cuisine of Dabiz Muñoz is fun and irreverent in many details, and breaks the barriers of the gastronomic avant-garde to enter a highly personal dreamlike plane, inviting the diner to live a roller coaster of emotions. In his striking establishment they serve a unique tasting menu, called ‘The Kitchen of the Flying Pigs’, which takes you on a spectacular journey through the different cuisines of the world, with special emphasis on Asian fusion but with the regular use of Spani

A'Barra

International · ★ Michelin

€€€€

A'Barra is much more than a restaurant: Its contemporary offering revolves around premium products, such as Joselito Iberian pork and seasonal vegetables from La Catedral de Navarra. To a striking backdrop of a profusion of fine wood, a spacious layout and cutting-edge design, guests can choose between the elegant dining room, spacious private rooms, an exclusive table in the kitchen and what they call La Barra, a separate, sophisticated space that is ideal for a cocktail or an aperitif. Chef Sergio Manzano champions a concept closely linked to the finest ingredients, technique and raw passion

Chef Óscar Velasco, ably supported by second in command and dessert maestro Montse Abellà, is back! Here, the couple, who view this challenge as a ”lifelong project”, focus on cooking that is close to Óscar’s heart and always showcases contemporary market-inspired cuisine that champions seasonal ingredients yet with a little more freedom than in his previous projects, while at the same time demonstrating equal levels of technique and elegance. (Temporarily closed). It is hard to find a better restaurant than this for La Mancha cuisine in the Spanish capital, where the self-styled “cocina de monte bajo” (which literally means “scrubland cuisine”) is shown due respect and transformed into a gourmet experience. Located in the heart of the city’s Salamanca district, it offers different dining options, ranging from tapas and “raciones” (the Iberian ham croquettes are an absolute must) at the bar to more gastronomic fare in the dining room in the semi-basement. The kitchen shows great character, bringing the flavours of La Mancha to the S

The Sandoval brothers (with Mario in the kitchen, Diego at the head of the dining room and Rafael as sommelier) are, without a doubt, three great aces of Spanish hospitality. The magnificent restaurant, which covers an area of 1,100 m², elevates the experience by being laid out in stages that allow you to multiply the sensations, with stops at its colourful English-style bar, in the small room dedicated to The Macallan whiskies, in the spectacular wine cellar (it even has a 'sacristy' where sherry is poured with a venencia) and, before moving on to the dining room, a final aperitif in the kitc

If you’re keen to take your tastebuds on a culinary journey, Quimbaya provides the perfect opportunity, thanks to chef Edwin Rodríguez’s ability to recreate the flavours of his native Colombia, the birthplace of the movement known as Magic Realism. This restaurant, which takes its name from an indigenous native tribe famous for its gold craftsmanship, features a small bar displaying a superb array of Colombian spirits, and a minimalist dining room with an open-view kitchen where guests can interact with the chefs at work.
