Cocina de Campo by Agricole

Located in El Pescadero along the highway that leads from Cabo to Todo Santos, this multi- concept space includes a farm shop, as well as a full-service restaurant, set outside within the garden. The contemporary menu leans Mexican with Californian elements, and the cooking is simplified to allow the ingredients to take center stage. Take the tomatoes, for instance. Layered slices topped with Kalamata olives over a coarse basil pesto prove that the best dishes don't need much intervention. Batter-dipped fried fish or the shaved ribeye are winning taco choices. Then, for dessert, the soft vanil

Oystera

Seafood, Mexican

Oystera is located in the heart of Todos Santos, in a massive and rather grand building that is built on the former site of a sugar mill. The oyster bar takes center stage, with the dining space surrounding the bar. A patio out back takes advantage of the view. Chef Poncho Cadena, a Sonoran native, oversees a seafood-focused, Mexican menu spotlighting contemporary, even ambitious, cooking. As might be expected, oysters are a must. Try the half-dozen selection, with all six sourced from Baja waters and served with their version of cocktail sauce, a mignonette and Baja-style ponzu sauce. If raw

Look for the carved wood sign, then walk along the path through what looks a bit like a jungle to this oasis-like space. Husband and wife, Chef Aurelien Legeay and Paulina Noble, are at the helm of this kitchen where the menu changes every new moon and offers both à la carte and tasting menu options cleverly dubbed "new moon" and "full moon." The cooking is playful and delights in the unexpected, as in oxtail with a red wine reduction and a smoked carrot purée with roasted baby carrots and long carrot chips. Steamed potato ravioli covered in a creamy potato Dauphinoise-inspired sauce with cris

This dining room of the Hotel San Cristóbal in Todos Santos feels a bit in the middle of nowhere but commands a prized perch along the Baja coast. Benno embraces an easy-breezy indoor/outdoor vibe. The patio area faces the pool and the beach; time it right and you get a stunning view of the sunset.Breakfast is offered, and evening fare incudes simple, straightforward cooking in preparations like ceviche, grilled local cheese, roasted chicken and house-made pasta. The pesca en mole verde, or catch of the day, may be yellowtail; it is served with a smooth textured, mild, herb and pumpkin seed sa

TENOCH by Paradero Todos Santos

Mexican, Contemporary

$$$$

Travel down a long dirt road past fields of peppers to find Tenoch. Located within Paradero Todos Santos, the restaurant's open-air setting is breezy and laidback and belies the serious food coming from this kitchen. The contemporary Mexican menu focuses on locally sourced seafood and produce from their own farm, and dishes feel timely. The soft-shell crab taco is as deceiving as it is delicious, appearing simple but coming alive on the palate. Slow-roasted beef tongue is loaded with flavor and incredibly tender while the manchamantel mole offers the perfect blend of spicy, sweet and fruity. F
