At this singular enclave, Chef Barclay Dodge and his team are executing seasonally inspired cooking that focuses on foraging, fermenting and local farms. The intimate, dimly lit interior reads moody and mysterious, but everything about the experience is open and accommodating, starting with the charmingly loquacious staff and impressive wine list. Though you can opt for a shorter menu, the full chef's tasting paints a complete picture. The likes of cocoa, miso, preserves, nuts and koji are deployed in imaginative, delicious ways. Indeed, this is a team that pays attention to detail — even ingr

The name is a nod to Aspen’s origins as a silver mining town, and its location inside the luxurious Little Nell Hotel, mere steps away from the slopes, is certainly glitzy. Enter the sleek, modern dining room through the lounge warmed by a crackling fireplace and settle in for an approachable menu that has something for everyone. The lunch crowd leans into comforting, warm bowls of tortilla soup and verdant salads. Dinner is a more involved affair, raising the stakes with the likes of lobster, roast duck and even a Wellington. Diners will make note of the array of bottles displayed behind glas

Located in the swanky, thoroughly photogenic Hotel Jerome, Prospect offers its own breezy take on Aspen dining. The colorful, eclectic space provides the setting for seasonal cuisine that utilizes ingredients from local producers three meals a day, with approachable à la carte offerings. Breakfast highlights American classics like a bagel with cream cheese and house-smoked salmon, or chicken-fried steak, while lunch and dinner lean Mediterranean, with the likes of lumache pasta with pesto and stracciatella cheese, or Colorado lamb loin with caponata and babaganoush. Mawa's Kitchen may not be the easiest to find with its tucked-away entrance, but stay the course because it's worth visiting this welcoming spot. Light colors, tasteful artwork and bare tables set with wildflower-filled vases create a mood-boosting vibe inside, while the outdoor terrace is a breezy perch. The food is equally appealing (think new-world meets old-world). Owner Mawa McQueen, who hails from the Côte d’Ivoire, delivers extraordinary quality with everyday value, such as black-eyed pea hummus served with pickled, charred and smoked vegetables and bread.
