Organic is the watchword here, from the mindfully sourced produce used in the kitchen to the furnishings chosen for the restaurant and hotel of the same name – the latter were crafted by local artisans from untreated natural materials. Many of the ingredients are grown in the on-site garden; fermented and pickled foods are also used.
