Modern French, Vegetarian · ★ Michelin

Ninety per cent vegetables and fruit, 10% meat (mostly game) and shellfish – that is the foundation on which chef Merijn van Berlo and his team build their dazzling tasting menus. This ecologically responsible vision extends to the glass, with a stylish range of organic and natural wines. Most of all, though, it is the chefs' creativity that shines – they know how to capture the essence of each season with remarkable flair.A grilled green asparagus cream, for example, is topped with pieces of asparagus poached in lapsang souchong tea, a fine julienne of raw white asparagus, a subtly spicy almo

Restaurant 212
Creative · ★★ Michelin
€€€€
As soon as you step into this quintessential canal house in the centre of Amsterdam, Richard van Oostenbrugge and Thomas Groot draw you into their world. There is something theatrical about the sight of the chefs working meticulously in their open kitchen. There is an enchanting intimacy and luxurious comfort about Restaurant 212. Nothing is left to chance here, and that goes for the attentive service, too. With their inventiveness and classical know-how (those sauces!), both chefs put their own stamp on their creations. An ingredient will undergo the most surprising of transformations, and it

To clarify the name: Scheepskameel (literally "ship's camel") refers to the wooden floats once used to help ships navigate the shallow waters near the naval dockyard at low tide. Today, a repurposed warehouse on the site is home to a bright and bustling restaurant that seats over 100 diners in an informal setting. Working in a completely open kitchen, the chefs turn out unpretentious cuisine that emphasises vegetables and contemporary flavour combinations. Expect dishes such as ripe green tomato carpaccio with whipped cream, anchovies, puffed quinoa for crunch and parsley for a subtle herbal a

Step away from the bustle of central Amsterdam, walk through the lobby of De L'Europe hotel and immerse yourself in the one-of-a-kind conscious fine dining experience that is Flore. Diners are welcomed in the kitchen with an introduction to the ingredients and their provenance, before moving on to the intimate, nature-inspired dining space. Bas van Kranen's cuisine is characterised by his original and mindful approach to the natural world. Biodynamic growers have become regular suppliers, and dairy products have been banished from the kitchen. His search for solutions fuels his creativity and

Contemporary design and classical elegance merge harmoniously in this dining space, which dates back to 1885 and is part of the Anantara Grand Hotel Krasnapolsky Amsterdam. The touches of gold in the decor create a sense of luxury. One can almost imagine an Austrian princess walking in at any moment. In this exclusive setting, the talented chef takes you on what will at times be a real adventure. You will immediately notice the use of fresh citrus, exotic spices and produce grown on Dutch soil. Expect vibrant, occasionally daring flavours. The young chef incorporates all this into imaginative

Bougainville is Hotel TwentySeven's upscale restaurant. Warm fabrics, luxurious design and bronze tones come together in a setting that is intimate and romantic. The contrast with the features of this historical building is indeed something to behold, and the magnificent view of Dam Square is equally remarkable. Tim Golsteijn's cuisine is in keeping with the sophisticated surroundings. He marries flavours from East and West with a creativity all his own. For this chef, technical skill and culinary instinct go hand in hand. He effortlessly balances the intensity of ingredients such as Thai gree

Lazuur
Mediterranean Cuisine
€€
Lazuur is cosy and welcoming. It's the kind of neighbourhood restaurant everyone wants close by. Chef Sherif Khalil loves rich bistro flavours and likes to add Portuguese or global nuances to them. For example, he cooks red mullet juicily in crispy filo pastry and pairs it with marinated ginger, a deep curry sauce with umami, a touch of yuzu and textures of Jerusalem artichoke. This cuisine is powerful and at times playful. The menu is appealing, as is the chef's menu. And to accompany all these delicacies, Lazuur also has an impressive collection of port and Portuguese wines.
