Xokol

Mexican · ★ Michelin

$$$

There's something very personal about Xokol, from Chefs/owners Óscar Segundo and Xrysw Ruelas Diaz. All guests are seated at a communal table that seats just over 40, and a light smokiness from the wood-fire oven, plancha and comal gently scents the air in a space. Sip a house cocktail (their fermentation program produces some interesting offers) and nibble on a fresh tortilla with spicy salsa before enjoying the chefs' traditional Mexican food, available as an à la carte or as a tasting. Kombucha-cured kanpachi is tinted with red beets and blue spirulina for a visually arresting presentation,

PalReal

Mexican · Bib

PalReal is the kind of restaurant where no matter the time of day, you're always guaranteed to get a satisfying meal. Climb a small set of stairs to arrive at this glass-encased patio surrounded by plants. This Guadalajara spot, led by Chef/partner Fabián Delgado, offers a little bit of everything on its contemporary Mexican menu. It's comfort food forward, with everything from starters like quelites tacos with avocado salsa, to entrees such as cochinita pibil with xnipec and blue corn tortillas. While the food alone makes them a great spot for brunch, their coffee makes it even better. Of cou

Alcalde

Mexican, Contemporary · ★ Michelin

$$$$

This long-running dining room is from Guadalajara native Chef Francisco "Paco" Ruano. Located in the neighborhood of Vallarta Norte, the multistory space features a slender ground floor and an upper-level dining room with an open kitchen. Rich-toned wood tables, white-washed exposed brick, colored glass globe ceiling pendants and a wall lined with Talavera ceramic platters set a stylish tone. The tasting menu is comprehensive and shares a contemporary vision, featuring local Jalisco and Mexican products. A seafood presentation may include a plump local oyster dressed with coconut palm sap, a s

Tacos Y Gorditas Elvira

Mexican · Bib

Tacos y Gorditas Elvira, situated in the Mercado Alcalde in Guadalajara, is a great spot to grab lunch. Pull a numbered ticket and wait to be called to place your order, then watch as they prepare their delicious tortillas and gorditas. The menu is small and the place is popular, with some offerings running out later in the day, so arrive early if you want to try it all. As for the must-trys? Their chicharrón and costilla are nonnegotiable. Juices and cafe de olla are available, and if you choose to eat at the counter, you'll find salsas, onion and lime to pair with your tacos and gorditas. Co

Teté Cocina De Barrio

Mexican, Fusion

$$$

Some places feel like a secret, and this one, tucked away behind a nearly unmarked black door in Guadalajara, certainly lives up to that sentiment. It doesn't end there, however. There are only four tables within, so reservations are a must, and there is no written menu, but brother-and-sister duo Mario and Karla Papa Garcia deliver on a wonderfully surprising, vegetable-forward meal. It begins with small bites such as a mushroom tart, tempura fried banana and fish skin chicharrón. Peas tossed with salsa macha and topped with turnip puree illustrates their focus, though the kitchen offers one

Birriería las 9 Esquinas

Mexican

From the tile floors and tile-lined walls to walls hung with pots and pottery, Birriería las 9 Esquinas has simple, rustic charm down pat. If the name didn't offer a hint, this longstanding restaurant is all about birria, specifically goat birria (the stained-glass goat's head enhancing one side of the kitchen is another clue). It is offered in a variety of ways here, with a standard order, a small order and an order of three tacos in freshly made corn tortillas. Their tortillas are skillfully made and cooked to order, and the birria is accompanied by a variety of salsas, as well as diced onio

Birriería "David"

Mexican

There are only eight stools lined up against a stainless-steel counter at this spot, located on the second floor of the Mercardo Alcalde, so you should expect a bit of a wait. It's worth your time, though, as this laidback eatery has perfected the art of birria, with three generations honing their craft over the last 60 years. Today, the son and grandson of the founder share their skills with diners who choose between a small or large plate as well as a choice of cuts (surtida or carnaza). It's slightly different here than what you may expect, as the meat is left in pieces, but it has that per

La Docena

Mexican, Seafood

$$$

La Docena has been making a name for itself since 2012. Known throughout Mexico for their upscale but far from fussy style, this Guadalajara restaurant has a rustic charm thanks to brick walls and tile floors set with wood tables and chairs. Seafood is the focus here, though there are plenty of other options, and many dishes are kissed by the flames from their live-fire grill. The kitchen shows careful restraint, letting the quality ingredients stand on their own. Start with a plate of oysters, served raw or cooked over the grill, before moving on to tacos like the taco de jaiba with softshell
