Canfranc Express

A great gastronomic experience? Here, given that the gourmet option is concentrated around three exclusive tables, you can enjoy it if you book well in advance; perhaps unsurprisingly, this captivating restaurant is located in the emblematic Canfranc Station (now a luxurious Royal Hideaway Hotel), inside an old carriage capable of transporting you back in time. The experience, which begins with historical details on the platform and includes a stop for aperitifs in the 1928 carriage-restaurant (offering a more French-style cuisine - in the evenings, run by the same team), is accompanied by a c

In this mountainous area on the edge of the Basque Country, this traditional establishment is simply charming. It is also the repository of a family history going back four generations. Ximun has now taken up the mantle, serving delicious traditional cuisine, characterised by generous portions and tasty well-matured broths and jus. The ingredients are local, and the suppliers are duly listed on the menu. This is comforting fare (think duck raviolo, mix of mushrooms, langoustine bisque; "Axuria" lamb: pressed lamb, macaroni gratin, Xipister, lamb jus), to enjoy in the bright, somewhat rustic-st

It is well worth visiting this mountain village to eat at this restaurant occupying a typical “chesa”-style house with an impressive old vine adorning the façade. Enjoy a drink in the public bar before heading upstairs to the attractive rustic-contemporary dining room featuring bright dining spaces, a minimum of furniture and impressive lighting. Here, owner-chef Alfredo García, showcases a traditionally inspired menu brought impressively up to date that always tries to champion seasonal and locally sourced ingredients. Canteré’s food-themed events are also highly popular, one of which is devo

The last thing you expect in an old stone mansion such as this, which has witnessed the passing through of pilgrims heading to Santiago de Compostela along the Way of St James over the centuries, is innovative cuisine that is well worth a break in your journey. Its interior is both rustic and contemporary in style, with two separate sections: the informal dining space at the entrance (Origen restaurant), where the only option is an affordable traditional menu, and the more refined gourmet dining room upstairs (with just three tables) where you can eat while watching the chefs at work. A sprawling country estate on the heights of Bidarray and Itxassou is home to a 17C farmstead and outhouses. A panoramic terrace commands a jaw-dropping view over grandiose rolling countryside. Chef John Argaud, who trained with the best in the Basque Country (the Ibarboure brothers in Ithurria), as well as at Le Meurice Alain Ducasse in Paris, shines the spotlight on outstanding local produce. The food is crisp, legible and dotted with creativity; some ingredients are cooked over embers or finished on a hot stone for an added distinctive edge. An example: morels stuffed with sweetbread and du

Located in a tiny village in the Alto Gállego region of Huesca province where its glass marquee-style design amid typical stone buildings comes as something of a surprise with the stunning backdrop of the Aragonese Pyrenees and its magical sunsets as a bonus! Here, chef Toño Rodríguez conjures up contemporary yet traditionally based cuisine that impresses with its high quality and flavour and a focus on local, seasonal ingredients with a nod to the classic dishes of the region (the appetisers, enjoyed at a small bar, are a tribute to the three provinces of Aragón) as well as those from his chi

Here in the centre of the village, this duo, whose enthusiasm is infectious, have set up shop in a half-timbered building that sports the Basque Country's characteristic red and white. It was once a Basque pelota ground (the reception still has the old ticket windows and a glass door opening onto the trinquet). Chef Nicolas Montceau and his pastry chef partner Julien Bonnal, who is also in charge of plating up the dishes, swear by local produce. Their multi-course surprise tasting menu in several sequences is a delight, rife with harmonious combinations of flavours, delicious jus and sauces, a

A restaurant with a rustic atmosphere that is considered a classic destination in the Valle de Tena. Occupying what was once a stable, it is now run by a young couple, with Sergio Sainz at the helm in the kitchen and Carla Frigolé in charge of the dining room. Lavedán has definitely moved with the times while retaining its full personality through its focus on the culinary traditions of the Aragonese Pyrenees area and its 'mountain gastronomy'. The cooking here is based around an updated take on local and regionally inspired dishes (their wild boar tongue in elderberry marinade won the award f
