La Table de Courcelles - Château de Courcelles
Modern Cuisine · ★ Michelin

With the arrival of Italian chef Massimiliano Sena (originally from Sorrento), armed with his impressive CV, this noble and elegant Grand Siècle-style residence has entered a modern culinary era that bodes well. Local and seasonal ingredients take pride of place, and the chef's Italian roots make themselves felt in a delicate and subtle manner. There's no showboating or recourse to culinary techniques just for the sake of it; the confident expertise and harmoniously preserved marriages of flavours allow diners to fully appreciate the slow-cooked egg with its airy chanterelle mousse, or the cod

Business is booming in this luxurious hotel surrounded by vineyards, thanks to plush guestrooms, a rose garden... and its restaurant, established in a bright, modern dining room whose large bow window affords a beautiful view of the landscaped grounds. Chef Nawal Rezagui crafts a precise score rich in character and ambition: a briny flan of smoked tuna and Aquitaine caviar; loin of veal in Brittany curry spices with salsifies and garlic and olive seasoning; a creamy iced extravaganza of bergamot, grapefruit, kombucha and dill oil… Bistronomic menu at lunchtime.

"The only neighbours of this old stone - built watermill (19C) are the greenery and the Surmelin, an affluent of the Marne. The interior decor is on the modern, pared - down side, with a light wood ceiling and designer chairs; the traditional cuisine smacks of all things bucolic. And in the guestrooms, you could hear a pin drop. "

You might say that Arnaud Lallement grew up at Assiette Champenoise, which was originally opened by his parents. Trained by the best in the business (Roger Vergé, Michel Guérard, Alain Chapel), he cooks high-calibre cuisine – inspired by the classics, generous and above all very tasty – and lets his Breton roots (on his mother's side) shine through. A larger-than-life presence on the restaurant floor, and supported by a warm and dedicated team, Lallement loves to engage with guests and treat them to simply good food. The dishes are accessible and enhanced by memorable sauces; ingredients are t

Between Reims and Épernay, this luxury hotel, set in a sort of modern-day amphitheatre built out of light-coloured stone, hugs the hillsides of Champagne. The interior celebrates the wine and the gilded ceiling sports a huge chandelier with 36 blown-glass orbs (bubbles). There is also a nod to Napoleon Bonaparte, said to have stopped off here when it was a coaching inn. The perfect foil to high-flying haute cuisine in tune with the seasons and founded on traditions that traverse the annals of French cookery, further enhanced by a crack front-of-house team. The wine cellar is, of course, well s

This local institution has proudly retained its MICHELIN star for over 30 years. Ever popular with its loyal clientele, the charming restaurant has more than one string to its bow, with its bright and elegant setting (the dining room overlooks the garden), its consistent modern cuisine with a personal touch, and smiling service from Céline. The chef – her husband, Alain Pavard – thrills diners with top-quality ingredients and precise flavours in dishes such as Mediterranean vegetables, burrata espuma, basil and crispy buckwheat tuile; pollock, fennel confit, rouille and bouillabaisse velouté;

At the foot of the Montagne de Reims and on the road to Épernay, this imposing inn unabashedly brandishes its opulent style. Come evening, the elegant dining space done out in pale wood takes on a romantic air – the perfect setting for fine classic French cuisine delivered by chefs Dominique Giraudeau (who shone for many years in the kitchens of Gérard Boyer at Les Crayères) and his associate, Pascal Champion. On the menu, top-notch produce, from John Dory to free-range milk-fed veal, as well as game, lobster and truffles.

This pretty village with a medieval church and 18C obelisk was founded in the 13C by the Counts of Champagne; in the 19C it was restored by architect Viollet-le-Duc. It is the ideal place for experienced and talented chef Nicolas Tissier (who has previously worked with Jean-François Piège and Christian Le Squer) to take over the family business. He gives free rein to his inspiration with surprise set menus packed with premium ingredients: langoustine, monkfish, sweetbreads, chanterelles, which he makes the most of in his balanced and harmonious dishes.
