In the Broc Bar, expect snacks and pub classics like haggis bonbons and fish pie, while there's a greater degree of formality in the Stables dining room. On a summer's day, head straight for the sun-trap garden, which also has its own dedicated menu. Throughout, Scottish ingredients and a 'nature-to-plate' philosophy underpin the cooking. They offer a choice of two dishes per course, each prepared with care and pride. The cooking is traditional at heart with the odd ambitious edge, but with technique this accurate and ingredients this delicious, there's really no need for unnecessary frippery.
