Grual

Contemporary, Italian Contemporary · ★ Michelin

€€€€

Housed within the Lefay Resort & Spa Dolomiti, an elegant hotel that dominates Pinzolo and is one of the best hotels in the Trentino region, this gourmet restaurant takes its name from the mountain behind the hotel (the Grual). Here, in the evening, chef Matteo Maezza serves his own reinterpretations of typical mountain cuisine inspired by the three different altitudes from which he sources his ingredients. For example, the bottom of the valley (“fondovalle”) is the inspiration for his marinated whitefish from Lake Garda, served with different types of turnip and Mugo pine milk; the Alpine pas

In a quiet and secluded location, inside the Biohotel Hermitage, the restaurant occupies an early twentieth-century stube: a wooden treasure chest with few tables, where you can be lulled into an evening of romance and haute cuisine, offered through three tasting menus. In the chef’s dedicated menu, Domenico Sepe brings his Ischian roots to Trentino, introducing seafood ingredients sometimes paired with meat. This talented young chef proves equally at ease embracing Trentino tradition, as demonstrated in the Cena in Famiglia menu. Vegetarian enthusiasts, meanwhile, will opt for the Cappuccetto

Though structurally connected to the DV Chalet hotel, it has its own independent entrance. The dining room’s modern elegance still pays tribute to its roots, with photographs on the walls honoring renowned local climbers. Trentino-born chef Fiorenzo Perremuto explores his home region, uncovering culinary treasures from Lake Garda to the Dolomites through refined, creative cooking.

Rendenèr Alpine Food

Contemporary, Regional Cuisine

€€

Situated within the Lory hotel, this restaurant has a contemporary decor and wooden tables that give it an informal ambience. Here, the young talented chef creates Alpine cuisine from carefully chosen seasonal ingredients, with menus changing throughout the year. In spring, for example, ingredients include Alpine sow-thistle, Mugo pine shoots, woodruff and lichen, while in summer herbs and flowers from the restaurant’s own organic kitchen garden add extra flavour to dishes. An interesting wine list with a focus on regional labels completes the picture.
