Modern Cuisine, Creative · ★★★ Michelin

On the first hilly slopes that embrace the village, amidst vineyards and silent gardens, the austere simplicity of the former 16th century monastery perfectly reflects the culinary language of one of the most recognisable fine dining experiences in Italy. Niko Romito continues to define - and refine - his vision here: a rigorous minimalism that never relinquishes sensory depth, expressed through dishes based on the measured use of just a few ingredients – be they vegetables or proteins – orchestrated with almost ascetic precision. The research continues relentlessly, as does the link with Abruz

An ancient farmhouse serves as the laboratory home of ‘engineering-minded’ Chef Giuseppe Iannotti, who presents a single, long tasting menu that arrives at blind. An intriguing journey centring on flavour, featuring daring combinations paired with interesting techniques and experiments to entertain the guests. Throughout this gastronomic voyage, you'll find slight references to Campania, yet primarily the journey leads worldwide, through reinterpretations of familiar recipes reimagined with personal creativity, fermentations, macerations, extractions, and some nods to the chef's past. Marotta
Modern Cuisine · ★ Michelin
€€€
Nestled amid the verdant hills of the Upper Caserta region, this delightful restaurant is a real gem. Young chef Domenico Marotta serves surprisingly high-quality cuisine with a focus on local ingredients and vegetables (some from the restaurant’s own kitchen garden) which he transforms into modern, minimalist yet generous dishes which are anything but predictable, and are showcased on three tasting menus and a short à la carte. We particularly enjoyed the Leccarda-style pigeon, a reinterpretation of a traditionally Umbrian dish, in which every part of the bird is used. The sommelier/head wait

Vairo del Volturno

Situated in the beautiful Volturno valley, this excellent restaurant boasts classic decor and a relaxed atmosphere. Here, owner-chef Renato Martino succeeds in expressing his love for the region in his dishes, which include the famous Black Casertano suckling pig, duck, lamb and the renowned buffalo mozzarella. The fish is also excellent, with mullet, John Dory and bream all featuring on the menu.

Chef Luciano Villani creates menus that focus on simplicity, organic produce from the Sannio region and an uncompromising philosophy. The restaurant is situated within the Hotel Acquapetra Resort&Spa, once an old farmhouse transformed into a luxurious hamlet, where antique furnishings and modern cutting-edge facilities combine to ensure a delightful stay in elegant surroundings. The gourmet restaurant adds to its appeal, featuring cuisine that is delicious and always recognisably regional, albeit with the occasional influence from elsewhere. There are two tasting menus: Aqua (fish dishes only)

I Lustri Lab
Contemporary, Seafood
€€
After years working in Michelin-starred restaurants in Lazio, owner-chef Kerim Jlali has achieved his dream of opening his own restaurant here, along with his life-partner Chiara. In an informal and colourful setting, the chef demonstrates his passion for fish and seafood, transforming his ingredients into contemporary recipes using skilful techniques (he refers to his restaurant as a “lab”) . The end results are visually striking and full of colour.

La Taverna delle Follie
Seafood, Classic Cuisine · Bib
€€
This restaurant with a discreet sign is situated in a small village overlooked by a splendid Norman castle. Meals are served either in the simple yet comfortable dining room or in the charming outdoor space in fine weather. The reasonably priced cuisine celebrates the sea in its many varied fish and seafood dishes, which range from pasta with shellfish or seafood to fish guazzetto (a tomato-based stew) with green vegetables and even raw fish options. Among the desserts, we particularly recommend the babà.
