Le Carmin
Modern Cuisine · ★ Michelin

On Place Carnot, not far from the Hôtel-Dieu, this restaurant with a modern façade occupies the ground floor of a picturesque old house. After stints with Robuchon and Ducasse, chef Christophe Quéant crafts modern, seasonal cuisine based on traditional textbook foundations. His top-quality ingredients are transformed into spot-on, straightforward dishes, blessedly free of fancy frills. The contemporary-style dining room, which sports a beige colour scheme and exposed stonework, is the perfect foil for delicious dishes such as sole fillets with mushrooms and tender leaves, or the Madagascan van

This elegant winegrower's manor house with a plush feel and bags of character is set in a leafy garden where tables are laid out in summer... It's the perfect setting in which to sample Jordan Billan's cuisine, which is rooted in the terroir of Burgundy and showcases the carefully-chosen suppliers. The chef's taste for tradition – think matured Charolais beef, bone marrow and a mustard and tarragon jus – does not prevent him from dreaming up more creative dishes with international influences, such as sole cooked on the bone with shellfish, kasha risotto, seaweed and nashi. This bistro on the main boulevard sports a distinctive contemporary decor complete with wooden floors, black and white striped walls and photos of the stars of French cinema enjoying good food. Cooking has no secrets for the chef who rustles up a spot-on, frequently renewed market-fresh menu. Given the location in Beaune, you won't be surprised to learn that the cellar boasts over 1000 labels – so drink up!

After a glittering career in the region, youthful Rémi Genot has returned to his roots in this famous wine-growing village. He pays homage to local producers and showcases fine cuts of meat prepared by his father in the next-door butchers. As comfortable working with vegetables as with fish and meat, he creates meticulous dishes, packed in colour and character. He is also skilled at juxtaposing different textures, in dishes such as tomatoes, fresh smoked goat’s cheese, rose geranium; brill, green peas, girolles, shellfish and melissa jus. Burgundy takes pride of place in the wine cellar and An

Table de Levernois
Modern Cuisine · ★ Michelin

The tradition of hospitality is kept alive in this elegant house situated in the middle of extensive grounds dissected by a river. Here, chef Philippe Augé creates carefully prepared cuisine based on classic principles, resulting in dishes such as green carnaroli risotto with frogs’ legs and snails, calf sweetbreads with petits pois à la française and lime-leaf vinegar jus, and a Grand Marnier soufflé with blood orange sorbet. Make sure you save space for the cheese trolley which includes several dozen varieties! Impressive Burgundy wine list.

Born in Beaune, Rudy Villien first fell in the love with Le Charlemagne during an internship, so he and his partner, Léa Matéos, leapt at the opportunity to take over this eatery in the heart of the Corton-Charlemagne vineyard. The serene, contemporary interior provides the perfect foil to sample dishes that waver between France and further afield (often Japan) with a personal spin: furikake and caviar aperitif snacks, crab and yuzu kosho smoked tomato, croaker in kaffir lime… The produce comes from a cottage garden, bee hives and cherry-picked suppliers. Loiseau des Vignes

A Bernard Loiseau stamped score and a chic bistro vibe (stone, wood and velvet-upholstered banquettes) paint this culinary portrait. The menu includes classics such as eggs in a red wine sauce, pâté en croûte, Charolais ox cheek and Saône catfish, without forgetting beautifully fresh Burgundy veal tartare with smoked eel. The wine list also unveils a wide range by the glass.

Le Relais de Saulx
french

This characterful town centre establishment (1673), not far from the Hospices de Beaune, is in the capable hands of Charles Danet (previously of Le Timbre in Paris). In an interior that is both rustic and inviting (think white-washed rafters, orange bench seating and a table d’hôtes), the chef crafts a healthy, tasty, legible, market-fresh score depicted by a haunch of veal, beetroot, hazelnuts and black olives, or baked apple, bergamot cream and house vanilla ice cream. Fine selection of (mainly) Burgundy wines, including organic and biodynamic vintages.
