Following the short walk up the hill, it’s time to sit back and enjoy the jovial atmosphere at this intimate restaurant. From the chefs preparing the dishes in front of your eyes to the sommelier’s well-selected pairings, everything runs like clockwork here. Chef Eric Mansikka’s surprise tasting menu features powerful flavours and colours, yet a delicate, very detailed touch, with the ingredients either foraged (such as the herbs, mushrooms and flowers) or sourced from local farmers, fishermen and hunters. In a fun touch, their empty beer bottles are blown into uniquely designed water glasses.

If you’re looking to take a train trip outside the city, then this inconspicuous little restaurant opposite Tampere Central Station makes the perfect stop off. Regional and international ingredients come together in recipes that favour Asian techniques – like chawanmushi with peas and crayfish or sea buckthorn with lime leaf and Arctic cloudberry – and the superb stocks and sauces really show the depth of the kitchen’s skills. The chef is a very affable character, delivering his dishes and explaining their composition, while the young service team present some interesting wine pairings.

There’s a well-executed fusion of the old and the new at this charming city centre restaurant located opposite Turku Cathedral (the only medieval basilica in Finland). Stylish, contemporary décor is brought into the vaulted cellar of a 19th-century riverside merchant's house, while the cooking combines traditional techniques with modern presentation. The finest Nordic ingredients run through the creative dishes, with the combinations offering memorable contrasts of flavours and textures. The kitchen team serve many of the dishes themselves, and the sommelier offers some interesting wine pairin
