A truly memorable evening awaits at Gaptrast, where three hours passes in a flash. You’ll be greeted with a glass of cider and talked through some of the outstanding local ingredients they have dry aged, before being escorted up to the lounge for meticulously prepared snacks, then on to the moody restaurant. The surprise menu comprises incredibly original, complex creations packed full of vibrant, well-layered flavours, where preserved ingredients and the charcoal grill are used to great effect. Highlights include the exquisite langoustine with beetroot and blackcurrant, and the oscietra cavia

Bergen’s Skostredet Hotel is the location for Sergey Pak’s latest restaurant opening – a dimly lit room with sleek styling and black and grey hues. Just one sitting per night ensure maximum enjoyment of the evening, which comprises either a shorter 14-course or a full 20-course tasting menu. In both, Sergey shows off his remarkable knife skills, preparing a refined omakase experience that blends high-quality Norwegian ingredients with impeccable Japanese techniques. Appealing dishes could include such delights as reindeer sashimi or wagyu served with caviar and gold leaf.

Start your evening with a walk around the octagonal Lille Lungegårdsvannet lake, then head for the KODE 4 art museum where you can dine looking back over the water. Larger than life chef-owner Christopher Haatuft passionately oversees the whole place, both serving dishes and engaging with guests – and while it’s certainly a smart place, the atmosphere remains pleasingly relaxed thanks to his cheery nature. Dishes are informed by Norwegian produce and recipes, with an added modern touch; you’ll find the likes of bluefin tuna crudo with beetroot, tiger’s milk, horseradish and phytoplankton oil.

Within the Skostredet Hotel sits this contemporary izakaya of the same name, where you are encouraged to come together and socialise over shared dishes. The chef creates an intriguing à la carte menu via the use of fresh Norwegian seafood, traditional Japanese ingredients and time-honoured Japanese techniques, with dishes ranging from sushi and ramen bowls to agemono (fried dishes) and okonomiyaki (savoury pancakes). For those that simply can’t decide, there are several sharing menus available too. In summer, the best spot to dine is outside on the terrace.

Twin brothers have brought a little piece of France to Bergen in the form of this proudly run, intimate bistro, where Jules cooks and Nicolas runs the service. Honest, classically based French cooking makes use of local produce; desserts are a highlight and wine pairings, well chosen.
