Take, for example, the perfectly pitched and beautifully reduced veal jus that accompanies the rich fillet of veal Rossini, with fine vegetable accompaniments that add their distinctive nuances. Meticulously crafted dishes are served in the form of a set menu; diners simply choose the number of courses. The chef brings his culinary creations to life with ingenious flavour combinations and international influences. For instance, ajo blanco cream elevates the fillet of smoked trout, and strawberry vinegar and chilli pep up a refreshing dessert. This young chef demonstrates a maturity beyond
