This restaurant is named after Agnés Marthe Nicole, one of the Franciscan nuns and owners who lived here in the early 20C. A series of narrow lanes leads to the building, which, as you will see, has undergone major renovations. At the entrance, you are greeted by works of modern art. On the top floor, the elegance and luxury of the place is taken up a notch – and the view of the old town from here is fabulous. Exquisite dishes and the well-heeled clientele show that this fine dining restaurant is of the highest calibre. The chef revamps traditional recipes from all over Turkey, adding delicate

The chefs use only the finest ingredients (and wines!), which take pride of place in original dishes that are stripped of unnecessary fuss. Everything here revolves around the depth of the flavours, which possess a distinctive Nordic purity. The dishes are not overly elaborate, but their complexity lies in their delicate harmonies. Neolokal bridges the gap between old and new. Respect for Turkish culinary traditions provides the foundation on which this restaurant is able to constantly renew itself. Flavours from the past are the mainstay here, reimagined with contemporary ideas and techniques. Maksut Aşkar and his young team preserve their culinary heritage and guide it into the future with their exciting cuisine. This commitment extends to environmental responsibility, with a vegetarian menu, using carefully selected local produce (including fine Turkish wines!) and working with nearby suppliers. A stroll through the trendy Çukurcuma neighbourhood, which is famous for its antique shops, should certainly include a meal at Cuma. At this cosy establishment – be sure to secure a spot on the front terrace – you can tuck into a traditional Turkish breakfast or Mediterranean-style lunch or dinner. Seasonal ingredients are showcased brilliantly in tapas such as sea bass ceviche, generously topped pizzettas, aromatic pasta dishes etc. The chef places special emphasis on vegetarian dishes, such as mushroom skewers and halloumi cheese with braised onion, pomegranate and deep-fried polenta. TURK FATİH TUTAK

Modern Cuisine, Turkish · ★★ Michelin

Fatih Tutak expresses his love for his Turkish terroir here, showcasing ingredients from the region and produce from local traders on a daily basis. This is a chef who cooks with respect for tradition and what nature has to offer. Familiar flavours are given a new dimension, and centuries-old practices are tailored to the zeitgeist. Part of his originality lies in his nuanced use of delicate acidity and smoky flavours. Pide, straight from the oven, is served with three kinds of butter – buffalo, cow's-milk butter and beurre noisette – turning the apparently simple to the sublime. Or try the pe

If you want to experience a contemporary side of Istanbul, then head to the eighth floor of Hotel Momento. The menu revolves around mezze, kebabs and barbecued lamb dishes. You can watch the chefs at work in the open kitchen, skilfully blending spices and smoky flavours and presenting each dish with impeccable care.
