Hostellerie Vivendum
Modern Cuisine, Modern French · ★ Michelin
€€€
Welcome to Dilsen, a picture postcard perfect village of Limburg, whose peaceful ambience also reigns in the Vivendum Hostelry. Established in an elegant 18C presbytery, the venue has been modernised while carefully preserving its historic cachet. The terrace overlooking the Oude Maas, is one of the finest of the region! Alex Clevers masterfully blends his classical training with a creative bent. A fan of Thai cuisine, he delicately mixes exotic flavours with local produce and traditions. His passion for exoticism, which is far from skin-deep, underpins his entire approach to food. For example

Margo Reuten is a trailblazer in the Dutch culinary world. She has held at least one MICHELIN Star since 1999 and is the only female chef with this accolade in the Guide. Time and again, she impresses with her keen eye for detail, generosity and choice of ingredients, which she works meticulously, drawing on a wealth of technical expertise. The beautiful presentation of the dishes instantly makes your mouth water. Her cooking style is contemporary but also embraces classic sauces. Her experience is beyond question, yet she continually pushes herself to explore new techniques with which she kee

Slagmolen

The charm of this authentic watermill, whose machinery is visible inside, is flanked by a stylish modern “barn”, whose huge windows overlook the stunning countryside. In addition to a peaceful terrace, the establishment boasts four deluxe rooms to prolong the evening in style. This highly distinctive portrait is pursued in the culinary fusion of old and new that also depicts the food. The styles of dad, Bert, and Giel, his son, have been merged and are gathering momentum. Family favourites such as pheasant in a cognac sauce and a dame blanche dessert (with vanilla ice cream prepared on the spo

De Lindeboom New Style

€€
It's hard to resist the style of De Lindeboom on account of the charm of the building (1765), the terrace laid out at the foot of the church tower and the appealing sense of warm Limburg hospitality. And then there is the generous cuisine with which chef Jan Willem Punt has made a name for himself. He seeks inspiration in the fresh flavours of the Mediterranean and draws on international influences, but also delivers a traditional sole dish as well as various vegetarian options. Take his okonomiyaki – Japanese pancake made with spring onion and shiitake, served with sweet-and-sour pickled cucu

Restaurant Tara

This fine dining restaurant is as stylish as it is warm and welcoming. Your charming hostess is always happy to help you navigate the wine list, and the chef, who has honed his craft in top-flight kitchens, has an instinct for selecting exceptional ingredients. Restaurant Tara possesses every element to entice the discerning diner – and it also delivers. In the kitchen, Glenn Heijlands takes an approach that is perfectly in tune with the zeitgeist, emphasising global nuances and refined techniques. A standout example is the brightly seasoned veal tartare, elevated by briny pops of oyster, oyst

Reua Thai

€€
Reua Thai has a rather rough-hewn feel, with wooden ornaments adding to the unique character of the space. Pattama Simons is an aficionado of authentic Thai cuisine but adds a touch of finesse. She often works with produce from her own garden or local suppliers and takes the time to create depth in her cooking. For example, she infuses beef stock with cinnamon, lemongrass, peanut and coriander to achieve a vibrant and subtly spicy flavour profile. This broth serves as a rich foundation to elevate chopped beef, rice noodles and daikon. With a choice of options for each course, the set menu is r

Modest
Creative French, Modern French · ★ Michelin

Sander Spreeuwers acquired the nickname Modest at hospitality school. Modest also means “unpretentious” which is an equally fitting description of this chef. The culinary score illustrates this ethos and is free of fussy frills or showy presentations, but steeped in Sander’s subtle, sensitive personality. A respect for traditional French fare, lashings of character and a weakness for Asian flavours set the scene for your meal. How about juicy North Sea seabass with a kefir-flavoured beurre blanc that strikes a balance between powerful and fresh acidic notes? This place is ONE of a kind. Housed in a converted factory, the restaurant blends raw industrial elements with trendy decor featuring unusual art including murals. The terrace at the Roer River is a fabulous spot in which to unwind. You are in good hands here, which you will sense as soon as the charming Canadian hostess comes to the table. She is your guide as you venture into Edwin Soumang's world of culinary sustainability. The chef boasts an urban kitchen garden of no less than 1 000m2, and he understands that the foundation of any great dish is the quality of its ingredients. What he does
