Il Tiglio
Contemporary, Cuisine from the Marches · ★ Michelin

It's quite a journey to reach the slopes at the foot of the Sibillini mountains where chef Enrico Mazzaroni’s restaurant is situated, but the effort to get here is more than compensated by the exquisite cuisine on the menu! Although the chef’s great passion is for regional ingredients such as mushrooms, trout, venison and potatoes (much of which is produced at his own agriturismo), his approach is decidedly creative and his recipes highly original. Balanced flavours are to the fore in dishes such as trout and veal with mushrooms thanks to the chef’s technical expertise, while over the years hi

Vespasia
Umbrian, Creative · ★ Michelin
€€€€
Situated in the historic centre of Norcia which is slowly returning to life after the earthquake, this restaurant is part of the smart Palazzo Seneca hotel. You pass through a succession of small rooms to get to the elegant Sala del Vespasia, where a female Japanese chef now showcases the best of Umbrian gastronomic delights after many years working in Campania and renowned restaurants elsewhere in Italy. Olive oil, cured hams, lentils, Cannara onions, crayfish and river fish, lamb from the Sibillini mountains and, of course, the excellent local black truffle are used in her creative and occas

Zunica 1880 a Villa Corallo
Modern Cuisine, Regional Cuisine · ★ Michelin
€€€
The historic Zunica 1880 – and the numbers don’t lie – is reborn within Villa Corallo, an imposing resort and landed estate. Guest rooms are in the main villa, while the restaurant occupies what was once the farm equipment building. Two vegetable gardens, crop cultivation, raising of calves and pigs, plus a new garden and pool, primarily used for weddings and events. The cuisine of Gianni Dezio, an Abruzzo native from Atri and student of Niko Romito, already operates at a high level through two tasting menus – at the chef’s discretion – or à la carte. His stylistic signature is a judicious, ta

Oishi
Japanese, Fusion · Bib
€€
Located in the heart of the city center, Oishi offers a comprehensive tribute to Japan in an intimate, minimalist yet colorful dining room that has been recently renovated. This homage to Japan is evident both in the interior design and – above all – in the numerous and ongoing classic Japanese references throughout the menu. Sometimes reimagined with local ingredients and flavors, the dishes range from crudo and marinated preparations to sashimi and nigiri, rolls, some tempura, and more. The wine selection is respectable, featuring Italian craft beers with flavors consistently oriented toward

A return home for Granaro del Monte to the center of Norcia and inside Casa Bianconi, a charming hotel, overlooking the town’s main street. A series of intimate dining rooms includes one adorned with frescoes, originally part of the old local granaries. The cuisine is traditional and offers the classic cured meats, featuring a truly excellent 24‑month prosciutto, as well as traditional recipes revisited by the owners, such as the outstanding tagliatelle with ricotta and sausage. The grill is always fired up, turning out beef, lamb, and other specialties. With excellent value for money and serv

Osteria Ophis
Cuisine from the Marches, Modern Cuisine · Bib
€€
Situated in the beautiful historic pedestrianised centre of Offida, this restaurant with a brick-vaulted ceiling is housed in the former stables of an old palazzo with a modern, inviting and intimate feel. Here, owner-chef Daniele Citeroni Maurizi skilfully reinterprets regional cuisine to create precise, imaginative dishes that are full of flavour. The stuffed cannelloni cooked on the barbecue grill are delicious, as is the veal tartare served with a warm meat, herb and vegetable jus on the side. We should also highlight the “low cost” tasting menu available for guests aged under 25.

Osteria dei Maltagliati
Farm to table, Regional Cuisine · Bib
€€
With a very young team led by Maicol and Federica, this rustic restaurant with an exposed-brick decor only opened a few months ago and has already made a name for itself thanks to its fine cuisine. In the dining room, the wood-fired oven and barbecue grill (the latter uses the embers from the former) take centre stage in many of the dishes, so that old, culinary techniques result in delicious cuisine that demonstrates a fine balance of traditional flavours and personalised modern twists. The lamb chops, served with freshly blanched saltwort flavoured with preserved lemon and a light garlic sau

D.one Ristorante Diffuso
Modern Cuisine, Country cooking · ★ Michelin

A few kilometres into the first hills of the Adriatic hinterland are well worth the journey to reach the tranquil village of Montepagano. Here one finds a restaurant of original and engaging character, which defines itself as a ‘ristorante diffuso’: a concept given tangible form by a succession of rooms, dining spaces and intimate period salons, punctuated by strikingly contemporary works of art, as though one were moving through a miniature village within the village. The gastronomic direction is entrusted to a chef of considerable ability, capable of conveying through simple yet imaginative
