You have arrived in one of the most beautiful villages of Wallonia. Eminently picturesque and set in woodland, Wéris is also home to this characterful restaurant. Behind a traditional Ardennes stone facade lies a classy portrait of contemporary interior decoration, dripping in elegant comfort and commanding a fine view of the garden. Chef Mario Elias orchestrates a creative score that can vary from complex to surprising, depending on his inspiration, but which is always flawlessly balanced, courtesy of his respectful use of fine local produce, often rolled out in several versions. Talented Wout Bru is at the helm of this chic BBQ restaurant in the heart of Durbuy. The stylish outer walls reveal a dark, inviting interior whose centrepieces are an imposing bar and a dry-ageing fridge. Unsurprisingly, prime beef, such as wagyu and other premium breeds, is the establishment’s raison d’être. Superlatively barbecued, the meat is served with knockout sauces and large portions of side dishes that each diner chooses themselves. There are a few fish courses on the menu, but this is really a place for meat eaters. First-class craftsmanship and lashings of respect for the produce.
