Modern Cuisine · ★ Michelin

€€€

The ascent to Grad Tabor castle in Laško, founded in the thirteenth century and, after centuries of history and varied use, transformed today into a gastronomic restaurant of romantic fascination, is well worth making. In this suggestive setting, self-taught chef Marko Pavčnik expresses a cuisine that is personal and unmistakable, little influenced by passing trends, and capable of celebrating the territory with creativity and contemporary sensitivity. Great attention is paid to quality and sustainability: local ingredients, often sourced from an organic farm, foraging, and whole-animal cooker

In the heart of the old town, this simple, no-frills restaurant focuses all its efforts on the quality of its cuisine, which is also reasonably priced. The menu is à la carte. Starters include a selection of charcuterie, while the main courses feature traditional Slovenian dishes alongside more exotic ingredients and recipes, from ramen to poke, via bao burgers and falafel.

The twelfth-century Rajhenburg castle, magnificently restored, presides over the banks of the Sava. Within its walls, restaurant A3 welcomes guests in elegant rooms arranged around a broad inner courtyard, and boasts a wonderful cellar of Slovenian sparkling wines, an ideal setting for an aperitif. In the dining room, a surprise menu of 4, 6, or 8 courses is offered, the expression of a mature, modern cuisine of great flavour. Particular care is devoted to local, seasonal and own-produced ingredients, in full respect of the Pavlič aquaculture tradition and the family’s trout farming heritage.
